Victoria Sponge Cupcakes 🍓 for . A white cake with a strawberry jam filling, topped with a swirl of vanilla buttercream (made using organic plant butter) and half a fresh strawberry!
Also made a three layer Victoria Sponge Cake this morning, which was the first time I’ve baked a cake since June I think! As per usual, I forgot to take a photo! 🤦🏽‍♀️

My mum’s scones (or biscuits to my American friends)! Served with a generous amount of strawberry jam and big dollops of whippable creamy oat cream!
My mum has been making this scone recipe for years and even she was surprised at how easy it was to veganise!
This was my first time using whippable cream, and I must say, I was impressed! It’s very easy to whip up and is has a very similar taste and texture to dairy cream (a good option if you’re not a fan of coconut cream).
For savoury scones, omit the sugar and add green chillies, grated vegan cheese, or whatever you fancy!
Ingredients:
8oz (225g) SR flour
4oz (110g) plant-based butter
2oz (60g) caster sugar
2oz (60g) ground almonds
Handful of raisins or sultanas (optional)
Pinch of salt
Plant milk

Method:
1) Stir together the dry ingredients.
2) Rub the cold plant butter into dry ingredients to breadcrumb stage.
3) Add just enough plant milk, a small amount at a time, to bring the mixture together to form a dough (the dough should be more dry than sticky).
4) Roll out to a couple of centimeters thick and cut into rounds (brush with plant milk for a shiny top).
5) Place on baking sheet quite close together (to help with rising) and bake at 200 C for 10-12 mins
6) Scones are done when lightly browned on top and they sound hollow when tapped at the bottom.

Thoroughly enjoyed taking the Plant-Based Baking Class 🌱 with Chef
This was the first plant-based baking course they’ve hosted and the recipes were truly divine! We made chocolate chip cookies, spiced apple cake with speculoos frosting and Provençal tomato galette! Needless to say, they didn’t last long when I took them home!
I learned so many new techniques and gained a greater understanding of how different fats (e.g. oils, butters, shortening and nut butters) work differently in plant based recipes.
I would highly recommend checking out the classes for those wanting to learn more about baking / cooking, but also if you just want a fun activity to do by yourself or with a friend!
(The cookies in the photo were made by - his were the best looking ones, obviously)!

So excited to be a vendor at the Autumn North Leeds Food Festival]] 🎉
This is my first pop up since moving back to the UK and I’m so excited to re-start in my home town 😊 I’ll definitely miss seeing my Columbus, GA regulars though! 😉
North Leeds Food Festival]] is being held this weekend Saturday September 11th and Sunday 12th on Soldiers Field at 10am-8pm!
Tickets are available from the North Leeds Food Festival]] link in their bio. There’ll be live music, numerous street food vendors, an artisan market, fun fair, live chef demos, independents bars and lots lots more! Come along and join in the fun!

Hello Friends! I know I’ve been MIA for a while, so here’s an update as to what’s been happening since we left Columbus, GA.

We moved back to the UK in mid July and immediately had to quarantine as per the Government guidelines relating to Covid-19. I spent this time registering the business in Leeds and completing all the necessary paperwork.

A week after we were out of quarantine, we moved back into our old house but we also all contracted Covid 😞. We then spent the next couple of weeks recovering and again had to self-isolate for 10 days as per the government rules. I therefore had to cancel my first pop-up booked in for August. (I do have another one booked in for early September though)! I’m also taking a vegan baking class 🤗

Now that we’re all recovered, we are settling back into our house and enjoying being back in Leeds, our home town. We still haven’t seen all our friends and family yet due to Covid, but we will in time! We’ve also added house hunting to our list!

I’m also really enjoying seeing how much Leeds has changed in only the three years that I’ve been away. So many vegan options now, at least a couple of options at almost every cafe and restaurant and some restaurants even having completely separate vegan menus! The supermarkets have also adapted so much with each of them offering a complete range of their own plant-based products. Lots of well known companies have also introduced vegan versions of their best selling products! I even got a vegan from the ice-cream van at

I’m currently on a train heading to Bristol with my sis-in-law to see my sister whom I haven’t seen since December 2019! 🥳

Our container from the USA is arriving next week so I’ll finally have all my baking things again! 🥰

Pictured are Pecan Sandies from a recipe that I adapted from 🍪This is the last time I baked which was over a month and a half ago now when we were in Boston, MA visiting friends. I’ll post the recipe in my stories. 😊

FREEDOM!!! So great to finally be able to wander around my home town Leeds! Had our day 5 test and release Covid results back and we’re all clear! 🥳 Feels great to be back again and the vegan options now available here are insane; I’m going to be spoilt for choice! Time to meet family and friends again after a year and half! 🎉
