Think I brightened up my colleagues’ Monday with these yummy Crunchie Cupcakes! 🧡🧁💜 A belated treat to celebrate my birthday earlier this month 🥳 The silky, golden syrup-infused vanilla buttercream worked so well with the chocolate cupcake and the light honeycomb of the Crunchie 🍯 That Friday feeling on a Monday! 😍💃🏼🥳

When life gives you lemons 🍋… make Lemon Butterfly Cakes! 🍋🦋🍋

I was reminded recently that I hadn’t made these for ages, so… 👩‍🍳🤩💛 Deliciously light and fluffy, these zesty lemon cupcakes are filled with a zingy lemon sherbet drizzle instead of the traditional, thicker lemon curd, and topped with a super-light, whipped lemon buttercream. Finished off with the butterfly wings and a sprinkling of icing sugar 🍋🧁💛 Perfect with a cuppa! 🫖😍

I loved the Creme Egg-iness of the vanilla & yolky-orange buttercream when we cut into this cake! 🤍🧡🤎

A recent break time treat for my colleagues - lasted about 5 minutes 😂 I think it’s safe to say it was a HIT. A soft, light, lemony sponge bursting with juicy blueberries and decorated with a zingy lemon glacé icing, more blueberries, and lemon zest. Delicious! 😋🍋🫐🫖

Ps. Even made a few mini cupcakes with the leftover batter! 🧁

Lemon and Amaretti Cheesecake 🍋💛🍋

Zingy lemon cheesecake made with fresh lemon juice, atop a crumbly, buttery biscuit base, topped with a deliciously tangy lemon sherbet drizzle. Finished with an amaretti biscuit crumb and finely grated lemon zest, swirls of whipped double cream and more amaretti biscuits (forgot the lemon slices to decorate, but it was lemony enough without!) 🍋🍋🍋
