An Easter must-have, τσουρέκι / Tsoureki is said to symbolize the resurrection and rebirth; the three-braids representing the Holy Trinity, and a red-dyed egg, which is commonly placed on top, represents the blood of Christ.

Mahlepi / Μαχλέπι
Mahlepi is the aromatic spice that derives from the seed kernels of the mahleb cherry.

Mastic / Μαστίχα
Mastic is a tree resin from the mastic tree, from Chios, which comes in small teardrop shapes.

This was also my Mum’s first ‘chewing gum’ as her Παππούς /Pappous (Grandfather) would give it to her when she visited (although, by this time, they were in Africa, not Greece)! It gradually softens once chewed.

Grind both into a powder to use in baking.

This is my first ever GLUTEN FREE Tsoureki!!

Now all the GGK baking is complete, I have to decide what to make for the family for Christmas Day! It's normally something very chocolatey🍫, as a few of of us don't like Christmas Cake 😲 I might bake A Yule Log or a Christmas Wreath again, but I feel like going a bit rogue! . . . 🤫😉
