Hi everyone! Iโ€™ve been away for a long while due to lockdown delaying our house move and my baking equipment being in storage for 7 months! Thankfully we moved in last week and are starting to find our feet again so Iโ€™ll be back with more tutorials soon. I hope you are all surviving this very odd year. Pear caramel upside down cake: I donโ€™t know about you but I always seem to have a lot of fruit left at the end of the week, thatโ€™s what happens when you live with a Scotsman ๐Ÿ˜‚ so this is a simple recipe to utilise your left over fruit, Iโ€™ve used pears but you can use apples, oranges or pineapple. You wil need:
100g dark brown soft sugar
60g butter
2-4 pears peeled and sliced (or fruit of your choice)
90g butter
90g caster sugar
2 eggs beaten
180g plain flour
1.5 teaspoons baking powder
80ml milk
1/2 teaspoon vanilla paste or extract

Peel and cut the pears/fruit (remember to cut out cores).

Grease 8-10 inch tin with butter.

Melt butter in pan on a low heat and stir in the dark brown sugar, when it is bubbling as in photo 6, pour into the greased cake tin and arrange the pears on top as per photo 7.

Whisk/beat the butter and caster sugar in a bowl until light and fluffy.

Add in two beaten eggs and mix slowly, add a bit of flour if it curdles, which it probably will but that doesnโ€™t matter as it will all come together when you put the flour in.

Mix in milk and vanilla with wooden spoon.

Add the Plain flour and baking powder then whisk/beat until smooth as per picture 12

Pour into tin with the pears and level off with a knife.
Pop in preheated oven at 180 for 30-35 or until golden brown. Take out of oven, leave to cool for 10 minutes then turn out so the cake is upside down with pears on top. Serve with ice cream or cream and enjoy ๐Ÿ˜‹ Send me your photos if you try this recipe out ๐Ÿ’œ

Cheesecake Brownies, here we go! ๐Ÿ˜๐Ÿ˜‹ You will need an 8 inch by 11/12 inch tin, or just improvise like me and use any tin you have ๐Ÿ˜‚, if a smaller tin cook for bit longer if bigger tin cook for 5 minutes less. Ingredients;
Brownie mix
135g chocolate
120g butter
220g caster sugar
90g plain flour
2 medium eggs
Cheesecake mix
150g cream cheese
30g caster sugar
1 teaspoon vanilla paste (optional)
1 medium egg

Melt the butter and chocolate for the brownies in a heat proof bowl over saucepan with an inch of boiling water in (make sure water doesnโ€™t touch bottom of bowl because it can burn the chocolate), the result should be a smooth, glossy mixture as per picture 3.

Stir in the sugar = pic 5

Stir in the flour = pic 7

Stir in the two eggs = pic 9

Grease tin with butter

Cut a circle/square/rectangular piece of grease proof or baking parchment for bottom of your baking tin

Pour in brownie mixture - keep a few tablespoons to one side for after youโ€™ve added cheesecake mixture

Mix all cheesecake ingredients together with hand whisk in a bowl until smooth.

Drop/pour the cheesecake mixture on top of brownie mix in your baking tin, then add the few tablespoons of brownie mix that you set to one side on top of the cheesecake mix and swirl it all together making a marble pattern, using a cocktail stick or a knife.
Pop in oven for approximately 30 - 35 minutes at 170, the centre should still be gooey and edges fairly firm. It should look better than mine because I forgot to set aside some brownie mix to put on top of cheesecake mix - so send me some pics of your creations ๐Ÿ˜‚๐Ÿฅดโค๏ธ Let cool and turn out of tin - refrigerate after 1st serving ... if your family donโ€™t eat it all in one go that is ๐Ÿ˜‚
