Pear caramel upside down cake: I donโt know about you but I always seem to have a lot of fruit left at the end of the week, thatโs what happens when you live with a Scotsman ๐ so this is a simple recipe to utilise your left over fruit, Iโve used pears but you can use apples, oranges or pineapple. You wil need:
100g dark brown soft sugar
60g butter
2-4 pears peeled and sliced (or fruit of your choice)
90g butter
90g caster sugar
2 eggs beaten
180g plain flour
1.5 teaspoons baking powder
80ml milk
1/2 teaspoon vanilla paste or extract

Peel and cut the pears/fruit (remember to cut out cores).

Grease 8-10 inch tin with butter.

Melt butter in pan on a low heat and stir in the dark brown sugar, when it is bubbling as in photo 6, pour into the greased cake tin and arrange the pears on top as per photo 7.

Whisk/beat the butter and caster sugar in a bowl until light and fluffy.

Add in two beaten eggs and mix slowly, add a bit of flour if it curdles, which it probably will but that doesnโt matter as it will all come together when you put the flour in.

Mix in milk and vanilla with wooden spoon.

Add the Plain flour and baking powder then whisk/beat until smooth as per picture 12

Pour into tin with the pears and level off with a knife.
Pop in preheated oven at 180 for 30-35 or until golden brown. Take out of oven, leave to cool for 10 minutes then turn out so the cake is upside down with pears on top. Serve with ice cream or cream and enjoy ๐ Send me your photos if you try this recipe out ๐
