The theme for this year’s Knaresborough Bed Race is the 60s, so it had to be a flavour that’s traditional and nostalgic — rhubarb and custard.

It took a while to get this recipe just right, but I’m so glad I stuck with it. You’ll be wanting more than one of these!

A soft rhubarb sponge, topped with a silky custard rose and finished with an edible Knaresborough Bed Race wafer.

We already use recyclable takeaway cups but the plastic lids have been bothering me so we’re swapping them out for a more environmentally friendly option 🌍

These ones are made from renewable sugar cane waste and as well as being fully compostable they’re easier to fit than the plastic ones! Win win!
