Sourdough is the process of making bread, proper bread.

It takes 3 days overall: from building a pre-ferment that takes overnight to be ready to use, to mixing and shaping, and then maturing in the fridge for a second night until it is ready to bake on the third morning.

Slow is better for you.

Dear Customers and followers,

I am writing to share some news regarding our baking schedule for the coming month. Sadly, I will not be baking during February as we will be heading back to Italy to visit my family.

It has been a few years since I have been able to see them properly, and we are especially excited to introduce our little manβ€”the first grandchildβ€”to my parents.

We will be back stronger than ever in March. We already have some new ideas for the year ahead and are looking forward to bringing them to fruition.
