π½οΈ An Easy Dinner That Doesn't Require Standing Over the Stove! π
Today I made stuffed peppers with turkey mince. Simple, delicious, filling, and the best part β just prepare everything and pop it in the oven! π
π Ingredients:
π« 8 small bell peppers
π₯© 1 kg turkey mince (or any mince you prefer)
π 100 g rice
π² Chicken stock (I used homemade, but a stock cube works perfectly too)
π§ Salt and black pepper
π§ Garlic powder
πΏ Basil
πΆοΈ Paprika powder
π 2 bay leaves
π©βπ³ Method:
1. Partially cook the rice, let it cool and mix it with the mince. Season with salt, pepper, garlic powder, paprika and basil.
2. Cut the tops off the peppers, remove the seeds and fill them with the mince mixture.
3. Place the stuffed peppers in an ovenproof dish, pour in some chicken stock and add the bay leaves.
4. Cook uncovered in the oven at 180β190Β°C for approximately 40β50 minutes, until the meat is fully cooked through.
β€οΈ And here's how I make it work for our family! π
If you're only making stuffed peppers, around 600 g of mince should be enough.
But my kids don't like peppers, so I used a whole kilogram of mince and made some meatballs with the leftover mixture. I cooked them alongside the peppers, so everyone had something they enjoyed! π
π½οΈ I served everything with creamy mashed potatoes and pickled cucumbers, and topped the stuffed peppers with sour cream and tomato sauce. π
And that's it! No spending hours standing over the stove, and the whole family is fed. β€οΈ
Enjoy! π₯°
