I’ve been a busy little bee this weekend 🐝.

Blondies and brownies, brownie cornflake tart and some cupcakes for a birthday celebration.

These are caramel sponge cupcakes with a salted caramel buttercream and galaxy caramel/ aero toppings.

Be honest, who’s having a dine in for two on Valentines Day?

Instead of heading for the usual tiramisu or sticky toffee pudding, why not treat yourself to a Valentines Brownie Roll?

This bad lad is rich brownie centre, filled with nutella, coated in milk chocolate and then garnished with some lovey dovey stuff. Oh, and not forgetting my raspberry and white chocolate fudge.

This little beauty is made for sharing. Whether that’s with your significant other, your kids, or both. One thing’s for sure, you won’t be able to eat this alone.

Brownie logs are £7.50 and bags of fudge are £3 each. Go on, treat yourself.

Be quick to order though as the brownie logs are popular (I would know, I made 20 of the blighters last Christmas).

Well, we may no longer be rocking around the Christmas tree, or roasting chesnuts on an open fire. But, with a new year having just started, I’m sure you all have plenty to look forward to, and let’s be fair, it’ll be Christmas again before we know it.

As for me, I’ve been busy at The Beating Baker HQ, prepping for Valentines Day (after all, it is less than 5 weeks away).

Anyway, here’s a sneak peek at something that will be featuring in my valentines day collection. Can you guess what it is?

🌗✨ V e g a n C a k e ✨🌓

Well look at this beauty 🤩 This is my first ever vegan cake that I’ve made and it was an absolute pleasure to do.

I made vegan sponge cake, vegan butter cream centre topped with more delicious vegan butter cream.

I was so pleased to be asked to do this by and overwhelmed that they travelled over an hour to collect the cake. Thank you so much for choosing me to make this cake for Niamh’s 20th birthday celebrations 🎂

So as 2023 draws to a close, I couldn’t be prouder to say I have hit my target.

In 2021, I set up The Beating Baker bakery in a bid to raise £1,500 for the UK’s eating disorder charity, BEAT.

Earlier today, I did my reconciliation from my Christmas orders and I was thrilled to see I had hit my target.

This would not have been possible without the support of you lovely lot! I am truly privileged to be able to say I have done this for something I am so passionate about. The reality is that eating disorders will still be here in 2024, and I am still deeply afflicted by one. But, knowing I have worked hard to make a difference is the biggest two fingers up to anorexia.

Thank you all, from the bottom of my heart , for all of your custom over the last year and a half. But fear not, the oven doors of The Beating Baker will not be closing any time soon. Here’s to 2024 and plenty more Beating Baker bakes!
