Shaping dough…

Third step in the process, after the bulk fermentation has happened it’s time to shape the dough and put it in a banneton ready for a long sleep in the fridge. Some days there’s 10 loaves, others there’s 30. I think this is the most satisfying part of the process, it’s quite therapeutic all that measuring, scrunching, squeezing and patting.
