I started macarons as a challenge during lockdown, and it's become what I'm best known for.
If you's also like to give them a go, you can do. Most macaron recipes use half a dozen eggs and leave you with a bowl of ‘I’ll deal with that later.'
Mine uses one.
Less waste.
Better for feeling batter change.
Better for visuals.
