Vegan chocolate and strawberry cake.

This was the cake what my now five year old has asked for. He went into details about it…
It has three layers of chocolate sponge, a thin layer of strawberry jam on each plus dark chocolate ganache, that I tried to “milk chocolatize” (to sweeten) so it would be less sickly for the kids.

It turned out really well and almost the whole thing was gone on the day.

Vegan Vanilla and Strawberry Cake

I am a chocolate lover through and through but there’s something in the pairing of vanilla and strawberries that I find hard to resist.

The icing is a mixture of vegan cream cheese, oatly whipping cream and Stork margarine, along with sugar amd vanilla paste of course.

It was very hard to resist licking my fingers whenever I had some icing on but thankfully I am an adult and able to behave as a PROFESSIONAL!😃

Vegan Lemingtons or as we called it in Hungary Kókuszkocka “coconut square”

One if my favourite childhood cakes, that I recently discovered how easy it is to veganise.
The OG version has honey in the sponge that I replaced with golden syrup there’s really not much difference. The chocolate coating has some cooked rum (so no alcohol), that to me, makes it so special.

I can’t seem to be able to make enough for my family!😊

Vegan Hazelnut Marble Loaf.
As soon as I tasted it, all my worries went away about the split on the top.
It is exactly what I wanted it to be. Soft, sweet hazelnut flavour with some coffee infused chocolate swirls in there.
