Roast dinner tonight, so I made a Mushroom and Spinach Wellington to go with roasted Potatoes, Carrots and Parsnips, Broccoli and Mangetout. And for dessert a Rhubarb crumble (haven't had one in years) and a Strawberry and Blueberry crumble (for those that don't like Rhubarb) with Alpro custard.

I've also Veganised a Corned Beef Hash by making it either smoked Tempeh and that was great too. Ideal as a breakfast/brunch dish with beans.
