It’s been a long time since I’ve posted, but today I had a super happy day with Carlene for her Extended Baking Class.
What an amazing job she did, with no previous experience, other than using cake mix from a box!
Carlene learnt how to bake sponge cakes using the creaming method. She made sponge cupcakes with white chocolate buttercream and raspberry jam, and a large lemon cake with lemon curd buttercream filling.
She decorated the cupcakes with piped buttercream, while the large cake was split, levelled, filled and given a semi-naked decoration.
Carlene took home her beautiful cakes to enjoy, along with a full set of notes/instructions to practice some more by herself. Really well done!

Me too Minna! It was an absolute joy to teach you this week.

Minna chose to do my Foundation Ganaching class with an extension for modelling skills. She had never worked with fondant icing or modelling paste before, so I was amazed at her beautiful results. Fantastic work Minna!

Lovely class this week with good friends Ellie and Caroline. Ellie had previously completed a baking class with me a couple of years back, and has been enjoying using her new skills to bake for family and friends. She returned this week with Caroline to do my Foundation Ganaching Class.

This class is the place to start if you would like to create professional looking cakes, without unsightly bulges. Get those perfectly straight sides, level tops and sharp edges.
It covers: levelling, filling, making and using ganache, icing, making and using modelling paste for some simple decorative techniques.
Caroline and Ellie chose to use some of my favourite flower moulds, along with lustre dusts and cutters to create their beautiful decorations.

I’m still teaching cake baking and decorating classes currently and it was lovely to have Suzanne join me this week for a Foundation Ganaching class. This is the perfect class for those who have confidence with their bakes, but would like to take their decorating skills up a level.

Congratulations to Jack and Tilley who married yesterday. What a beautiful autumn day for their special day.
70 autumn themed cupcakes with 5 different designs and 2 flavours. Plus a small semi naked cake with 2 adorable hedgehogs, autumn leaves and acorns for the topper.
All decorations were modelled in icing (modelling/flower paste) and so perfect for the season.
Cupcakes in traditional sponge with hidden raspberry jam preserve and white chocolate buttercream underneath the fondant icing toppers.
Also Zesty Lemon sponge with lemon curd filling and lemon buttercream underneath the fondant icing toppers.
Semi naked cake also in Zesty Lemon with lemon curd.

We made it!!
As well as 3 tiers of cake (packed up separately in individual boxes) and 3 boxes of sugar flowers, we also took a number of containers of fresh flowers cut from our garden and allotment. Drove all the way from Hastings to Birmingham safely. Everything for the cake made it intact, and there were only a very few wilted flowers that had to be discarded.
It took 2 and a half nervous hours once at the venue, to carefully unpack the cake things, stack cake and arrange the sugar flowers.

ALL flowers on the cake were sugarcrafted by hand.

So relieved and so, so happy to create this beautiful cake for my beautiful niece. I absolutely adore the colours and flowers she chose. (And don’t the fresh flowers look lovely as well?!)
It was such a fabulous joy filled day.
Cake:
Bottom tier in Traditional sponge with white chocolate buttercream and seedless raspberry preserve filling,
Middle tier in Chocolate Fudge Cake with rich chocolate buttercream, hazelnut praline and Nutella fillings,
Top tier in Zesty Lemon sponge with Lemon curd buttercream filling.

Say a prayer for safe travels of these beauties!! 😳
Lots and lots of sugar flowers will be travelling up to Birmingham with us on Friday for my niece’s wedding. Cake going as well, in 3 separate tiers, to put together on the day. I am nervous 😬

How long do sugarcrafted poppies take to make, I hear you ask?
Too long. That’s all I’m saying!
*Make the centre green part with the ridges. Allow to dry on the wire for at least 2 days.
*Dip in ‘pollen’ and make sure it’s only on the right places.
*attach white stamens (VERY fiddly)
*colour stamens yellow and dip in ‘pollen’
*make 4 or 6 petals which are wired, edges thinned, textured and shaped. Allow to dry.
*tape the petals to the centre.
*dust with edible coloured dusts (photo taken before this stage).

Congratulations to Kelsey and Tim who married on Friday at Hayne House.
Their beautiful cake had some very personal touches- the gold coffee beans and the bridge on the bottom tier, were both part of their story as a couple.
All flowers were sugarcrafted - roses, eucalyptus, other foliage, buds and blossoms.
Flecks of edible gold leaf were added to tie the design together.
Bottom tier - traditional sponge with white chocolate buttercream and raspberry preserve fillings.
Middle tier - Spiced Carrot Cake with brandy soaked sultanas and citrus buttercream filling.
Top Tier - Cherry Bakewell, and almond sponge with soaked cherries, Morello Cherry preserve and white chocolate buttercream.
