“School hours” = about 5 hours, so it’s non-stop to produce all of this 🫠 Not in the video are two other trays of macarons that wouldn’t fit on the table 😇 Looks like a lot, but remember that I need two shells to make a macaron, so my actual output is half of what you see here xx

People ask me how long it takes to make macarons from start to finish. There’s no simple answer. I make small efficiencies by baking all the shells in one go (over a couple of days), then on another day I’ll make all the fillings, and then the last step is filling the shells before refrigerating for at least 24 hours to let the flavours settle and permeate the whole macaron. It’s a long process. Especially when I’m offering up to 9 different flavours at a market. I also use all natural flavours - fruits, nuts, spices. I cook the fruit, roast and grind the nuts - all from scratch. So my kitchen smells incredible on a day like today 🫶🏼
