ON THE MENU THIS WEEK
BASQUE STYLE WHOLE GRILLED TURBOT
Drizzling turbot with a simple vinaigrette while it cooks over a hot grill keeps the skin from drying out.
The natural gelatin from the turbot stirred together with the vinaigrette helps form a thickened emulsion that we spoon over the fish before serving
The fish is then served whole so you can appreciate all the small morsels of fish including the succulent meat around the fins and cheeks.
