Light the Aga and make sure there is plenty of wood and start on those nice bottles of wine that you have squirrelled away. Oh and weather allowing a nice bit of fishing.

Seriously? £333,000 second hand? I couldn't even afford to fill that with deisel.

Pleased with the outcome of a no knead sourdough loaf made with my genuine 15 day old starter and no discard . Life's too short to bash dough for ages just mix and leave. 50% Trencher flour as this years Red Lammas is still waiting to be cleaned as unfortunately i am too busy with balancing recuperation and farm work. I'm back driving tractors but at reduced speed so as not to bounce around too much.

The new starter is doing well, I'll use it for my next bake to honour Sd Sept. I can't understand people who spend good money buying a 50yr old 'San Francisco' starter as by now how much of that original fauna is left? I could say this is a 323yr old farmhouse starter and it is but it still just contains the strongest 'bugs' that are floating about here. Save your money and don't get ripped off.

Another no knead yeasted loaf but as its Sourdough September I'm.starting a new culture (in the glass) to try no knead Sourdough. Should be interesting if nothing else. I only use a small amount because its enough and all this add and discard is ridiculously wasteful. I know you can use the discard but life is too busy for that.

Just a reminder that bread scoring wasn't invented recently as some seem to think. Prints from a 1948 commercial baking book, yeast only bread made in 1 sack batches the sack being 280lb weight (130ish kg) if you want sour add vinegar! Fantastic read as the author, even then, bemoans the lack of taste and quality of 'modern' bread and the creeping influences of additives and enhancers.
