Freedom Bakery is a social enterprise based in Glasgow, training people with convictions in artisan baking with the intention of finding them an industry-related career following their release. The baking industry holds the largest potential for jobs in the food industry in Scotland. Our philosophy is that learning within a fully operational and self-sustaining enterprise-model is the most pragmat

ic approach to create employment prospects for prisoners, because it allows them to hold responsibility and feel that they are a part of a respected and productive team. Sustainable employment has been shown to decrease reoffending dramatically. For every ex-offender who can stay in employment the Scottish taxpayer is saved £940,000 per individual. Freedom bakery is a non-profit community interest company, which was registered in April 2015. It is the first social enterprise to establish itself within a prison in Scotland, after successfully lobbying the Cabinet Secretary. Freedom is also the first start up in the UK to use Social Investment Tax Relief to finance its start up.

Our Story

Freedom Bakery is a Scottish artisan bakery putting a creative twist on baking and a social conscience into our business. We are a social enterprise that believes that people at risk of committing crime can benefit significantly from professional training and employment opportunities.

Freedom Bakery was established in 2015 at HMP Low Moss. We ran a small bakery within the prison walls, training inmates and wholesaling to cafes and restaurants in Glasgow. In 2016 Freedom made the decision to expand. Just over a year later and after raising significant investment we opened anew, purpose-built bakery in Glasgow.

We continue to work with prisoners from HMP Greenock, HMP Barlinnie and HMP Low Moss who come out to our bakery on a training programme on day release. Where we can, we are actively seeking to offer employment to our apprentices after release, and where we cannot, we work with a number of partners to assist them into employment.
