🍔 Deconstructed Burgers 🥗
This is what we had last night and it was delish! All the flavours of a classic burger, just deconstructed! This is one of our go-to quick & easy family meals, and my kids absolutely love it. I added homemade potato wedges & corn on the cob - both air fried.
⏱ Ready in around 20 minutes
👨👩👧👦 Perfect for busy family mealtimes
✨ Easy to customise for everyone (it’s taken from a slimming world cook book, hence low cal cooking spray etc, but could be adapted to your preferences!)
🛒 Ingredients (serves 4):
• Low-calorie cooking spray
• 500g lean beef mince
• 1 onion, finely chopped
• 2 garlic cloves, crushed
• Salt & freshly ground black pepper
Salad:
• ½ iceberg lettuce, roughly shredded
• 8 gherkins, sliced
• 1 small red onion, finely chopped
• 2 tomatoes, roughly chopped
Burger sauce:
• 3 tbsp extra-light mayonnaise
• 5 tbsp fat-free natural fromage frais
• 1 tbsp American-style mustard
• 2 tbsp tomato purée
• 2 tsp white wine vinegar
• ½ tsp garlic salt
• ¼ tsp onion granules
• ¼ tsp sweet smoked paprika
• 4 tbsp water
👩🍳 Method:
1️⃣ Spray a large non-stick frying pan with cooking spray and place over a high heat.
2️⃣ Add the beef mince, onion and garlic. Stir-fry for 6–7 minutes until the beef is cooked through and the onion has softened. Season well with salt and pepper.
3️⃣ Meanwhile, whisk all the sauce ingredients together in a bowl until smooth.
4️⃣ Mix the lettuce, gherkins, red onion and tomatoes and divide between four bowls.
5️⃣ Spoon the beef mixture on top, drizzle over the sauce and serve hot.
Comforting, fresh, and totally fuss-free — a family dinner win every time ❤️
