Cupcakes, large cakes, tiered cakes, celebration biscuits or sweet treats whichever or all if you prefer. I design, make and decorate cakes in my studio, all of them unique to my clients. As I moved into Worcestershire recently, I've had to register a

s a food business with a totally different area; Wychavon Environmental Health, so now just waiting for their rating which may be a long time coming thanks to the Covid pandemic! In the meantime, I'm fully covered by the relevant insurance for product and public liability. As some of you like to make your own cakes have a look at my fondant models to use as decoration, which you can purchase separately. At the time of writing this description, we are just coming out of a pandemic so social distancing is still important to some people. To make cakes more accessible, I offer a contactless delivery or collection service as well as payment. Wedding consultations can be conducted via Zoom or Skype or Messenger video and taster boxes can be put in the post to you. Who's going to see it anyway? 🥂 The back of your wedding cake, that is.

It'll face the wall, or the corner of the room.  It's not likely to get photographed, no one is going out of their way to admire it, you won't even notice it.

Or will you?

To my mind the back of your wedding cake is JUST as important as the front.  Without it, your cake is unfinished, left wanting.  You may never see it, but because I give the back of your cake as much love as the front, when you're stood together, hands lovingly crossed cutting that first slice you're confident knowing that your cake is complete. 🥂

LOVE CELEBRATED ❤️💕

I was honoured to create this cake for J & J's beautiful wedding day. The sun was shining, Kingscote Barn, the venue, was dressed perfectly and the couple looked absolutely stunning!

Not every cake needs to look pretty...and this one DEFINITELY does not!! But does it taste amazing???

Oh my word! There's 450g of pure Belgian chocolate in this cake......no cocoa powder, no other flavouring, nothing! Each layer sandwiched together with my vanilla Italian Meringue Buttercream..... chocolate heaven.

Nothing more to say really.

Chocolate lovers look away NOW!

We all know a little chocolate is good for you, BUT this is pure indulgence! 450gs of melted luxurious Belgian chocolate destined for a single 7 inch round cake. No wonder I call it DECADENT Chocolate Cake!!

Not just a nod to chocolate flavour, this is commitment; dedication, to giving YOU what YOU asked for. Chocolate Cake.

She's as temperamental as they come!

White choc ganache 🙈.......used to be my nemesis and, I confess, for months I struggled to get this right. She has a tendancy to split if you don't understand her needs. (Bit of a drama queen tbh!)

🍫 She needs the right ratio of chocolate to cream
🥵 She needs heat but not too much
⏰️ She needs time for the chocolate and cream to get to know each other, and lastly,
🏃‍♀️ She needs a bit of activity to turn those two elements into the silky, smooth, oh so delicious ganache which I use on every cake I make!

So you see, she's one controlling cookie and I have no option but to play her game. 🤣

Single tier cake means just one flavour, right?

Absolutely not! There are four layers of cake in my standard height tier. Theoretically that means you can have a different flavour for each layer, and why not?

Imagine this:

Layer 1 - Decadent chocolate
Layer 2 - Salted caramel
Layer 3 - Vanilla bean sponge
Layer 4 - White chocolate and fresh raspberry

You could substitute with any of these flavours:
Ginger cake, luscious lemon, orange sponge, red velvet, biscoff, Earl Grey and orange, elderflower and lemon

All I would suggest is that you keep the filling between the layers the same and for it to be a neutral flavour. My vanilla Italian Meringue Buttercream is a perfect match with any flavour. 😋

I wish I had known this hack at the very beginning!

So most recipes start off with "grease and line the tin...". What a faff!! Almost enough to put you off baking, right?

Some years ago, scrolling through YouTube (as you do), I came across this cake goop recipe from Liz Marik (The Sugar Geek). I gave it a try, and it worked!! (Huge thanks Liz) So thought I'd share it with you here.

🍰 Just 3 ingredients in equal quantities 🍰 Whisk them together until they're creamy
🍰 And there it is: your very own Cake Goop
🍰 All that's left is to brush it all around your cake tins.

👍 Now bake your cake
👍 Once cooked, flip your tin over
👍 See, it works!! No need to cross your fingers and hope for the best. 🤣
🥳 Cake slides out of the tin no problem!

WARNING: a little goop goes a VERY long way, so you won't need to make too much of this. HOWEVER: It freezes brilliantly, so portion the mixture up and pop it in the freezer ready for the next time you make a cake.

OK folks, I'm not going to pretend this is HARD to achieve, (it's definitely not), but some of you out there may think its beyond you. Read on to find out exactly what's included.

When I came across this trick, my "cupcake world" changed!

You know that feeling, right? Feeling proud that you're actually going to bake some cupcakes, even though baking really IS NOT your thing

👍 You've read the recipe,
👍 Weighed out all your ingredients
👍 Mixed up the batter just as it says
👍 Taken care to get the batter IN the cases, not running down the side 🙈
👍 Put them in the oven to bake
👍 Set the timer (critcal)
👍 Took them out and they look AMAZING!
👍 Well done you!! 👏🥂

and then...........DISASTER! The cases are peeling away from the cupcakes and all your hard work looks a complete mess.

No more baking for you then. 🤣

STOP!!

It's not you......its the moisture! When you take those delish cupcakes out of the oven, they hit air which is cooler than the oven and so the steam from the heat condenses and turns into moisture. The cases absorb the moisture and then peel away from the cupcakes! That's the problem.

HERE'S THE SOLUTION

Put a few grains of uncooked rice beneath each cupcake case. All that moisture is then absorbed by the rice! That's it, job done!

Fabulous tasting cupcakes looking great in cases that do not peel. Yaaay!!! Success! 😊😊

Save this simple hack, try it and never again will you feel disappointed.
