Over the years, I have tried and tested A LOT of cookies but I can confidently say that these are my favourites. Filled with flavour, they’re chewy, gooey and always baked fresh. Whether they’re a gift, for an event or a treat to yourself, they always hit the spot!

Slice series 🍰 episode 1

Hello and welcome to my slice series… a great excuse for me to try different flavour combinations, experiment with new recipes and of course eat more cake 😛

First on my series, I have started with a twist on the classic banana bread. This is a banana cake with date caramel whipped buttercream, filled with some more date caramel.

The date caramel recipe is vegan, containing coconut cream, making the caramel smooth and silky. The sponge is so soft, spiced with cinnamon and the buttercream is light and fluffy, sweetened with dates, vanilla and maple syrup. To conclude, the cake is almost like a banana sticky toffee pudding. SO GOOD!
