I’m absolutely delighted to have been accepted onto this course with Damien Wager at Pastry Academy UK! 🥐✨

Three days of modern patisserie, lifelike fruit, mono-portions and tarts — basically my idea of heaven! 😂❤️

Vegan cherry frangipane tart, baked until golden and finished with a generous scattering of toasted almonds. I’m rather pleased with this one. The beauty of this bake is the pastry does not have to be baked blind! 👩🏾‍🍳👩🏾‍🍳

The 4 layer wedding cake I baked for my daughter & her new husband was so difficult.

I was in pain and I almost launched it into the bin on several occasions! It all turned out ok in the end! The layers were Chocolate Guinness cake, Vanilla & Lemon drizzle, finished with edible flowers 🥰💕👰🏾

These are mix and match American cookies. Half choc chip and half white chocolate chip! Yayyy you can have both! 🎉🥳

I thought I had used up the dried fruits from my Christmas baking but no!! This is Bara Brith, a traditional Welsh bake made using dried fruits that have been soaked in strong black tea overnight. It has a rich slightly sticky texture. Sliced thick and served with butter & your favourite hot drink. Tastes even better the next day!
