The internet has spoken, and we listened! 🥄✨
Say hello to our newest obsession: The Dot Cake (yes, that viral TikTok cake!).
If you haven’t seen these taking over your feed, here is the scoop: We take layers of our ultra-moist sponge and fluffy buttercream, pack them into a cup, scrape the top perfectly flat, and press it into a massive bed of rainbow sprinkles.
The result? A perfectly crisp, satisfyingly crunchy sprinkle crust that you have to tap, scrape, and break through to get to the cake underneath. It’s the ultimate ASMR dessert experience! 😍

🍪 It's National Biscuit Day!

Today we're celebrating Scotland's much loved classic, the empire biscuit and reflecting on the brilliant challenge we set at the beginning of the year, for Scottish bakers to go head to head in creating a record breaking empire biscuit.

After some seriously impressive entries, it was Harry Gow who rose to the occasion, taking the crown with an impressive 78 inch empire biscuit 🏆

A fantastic showcase of skill, creativity and a little friendly competition from Scotland's baking community.

Now that the hit musical WAITRESS has officially wrapped up its spectacular run at the Edinburgh Playhouse, we’re looking back at this absolute standout moment for our brilliant industry.

Before taking their final bows, West End stars Carrie Hope Fletcher and Evelyn Hoskins stepped off the stage and into Mimi’s Bakehouse on Market Street!

This partnership was a match made in baking heaven. WAITRESS celebrates female friendship, resilience, and the magic of baking, themes that are at the very heart of Mimi's, an incredible family business proudly run by women across generations. 👑🧁

A huge congratulations to the entire Mimi's team on a beautifully executed partnership that brought together theatre fans and bakery lovers alike.

Did any of our community manage to catch the show or pop into Mimi's for a treat during the run? Let us know in the comments! 👇

The ultimate Scottish debate has officially been sparked! 🍪

Huge congratulations to our brilliant members, McGhee’s Bakery, who are bringing a nostalgic Scottish twist to lunchtime. The iconic, individually wrapped empire biscuits (and delicious caramel shortcakes!) have joined selected Tesco meal deals across Scotland! 🥳

But the launch has uncovered a shocking truth...

According to new research by McGhee's, over a third of Scots (36%) admit to picking the 'joob joob' off the top and eating it first! Meanwhile, only 30% eat the full biscuit together.

Managing Director Gordon McGhee, who has personally topped over 5 million empire biscuits, is trying not to take it personally! 😂 He recommends breaking it in half so you get the ultimate balanced experience.

So, we have to ask the Scottish Bakers community... How do you eat yours? 👇

🍬 Team Joob-Joob First: Pick it off, savour it, then tackle the biscuit.

🍪 Team All-Together: One big, beautiful bite.

🍦 Team Icing Only: Lick the top layer first.

🤝 Team Gordon: Break it in half like a pro.
