It’s that time of year again when us bakers are thinking about Christmas cake designs so here’s a reminder of my edible snow technique…it’s simple, easy and effective!

* Mix up some royal icing, the shop bought type is fine
* Spread it as thinly as you can on a board
* Leave to dry completely, overnight works well
* Use a pallet knife to scrape off the board, this will give you flakes
* For finer snow use the ‘rubbing in method’, as though you were making scones, and simply rub the flakes through your fingers
* Voila! Lovely fluffy, edible snow!

This lovely cake travelled up to Scotland for an intimate wedding celebration.
The cake flavours were luscious lemon and chocolate orange.
