Why is this even legal?

Brioche is made from flour, milk or water, eggs, butter, sugar, yeast and salt.

The manufacturer of the pictured UPF buns has chosen to omit the butter and eggs, so why are they allowed to call this brioche?

What the UK’s largest industrial dough fabricator has chosen to use instead includes: rapeseed and palm oil, pea protein, glucose syrup, rice flour, tapioca starch, refined wheat gluten, soya flour and a mysterious unspecified ‘natural flavouring’.

The ‘family bakers’ have also chosen to lace the things with E282 (calcium propionate), E160a (beta carotene), E300 (ascorbic acid) and no fewer than three synthetic emulsifiers: E471 (mono- and diglycerides of fatty acids), E481 (sodium stearoyl lactylate), and E472e (mono- and diacetyl tartaric acid esters of mono- and diglycerides of fatty acids, AKA DATEM).

Get REAL!

If you want a vegan alternative, go for it (we’ve got a free recipe on our website, as it goes), just don’t call it brioche.

If you’re going to chuck the chemistry set at it, don’t even call it bread.

(PS before any of our lovely trolls start going on about any of these additives being versions of things that occur naturally, go and read how the industrial version are manufactured. Please also consider that the ‘it’s just...’ argument about a given additive applies to coal and diamonds, which are both ‘just’ carbon.)

Falkland Winter Festival got cancelled today so after a bit of fun in the snow we’re heading to Primary School in Kingskettle. All the buns and brioche waiting in the car! It’s on from 13.30 - 15.30
