Oh hello little gluten free beauties! A request from a customer for a Brie and cranberry gluten free focaccia.

Unfortunately the dough didn’t quite stretch to my usual sized tin, so I improvised and used two smaller tins that equates to the same amount as said usual tin.

Gluten free is always a little bit of a challenge but I’m up for it! With the lack of gluten, even with the addition of xanthan gum and baking powder, the rise will always be a little problematic but delicious all the same 🥰
