ings. We pride ourselves on using locally-sourced ingredients where we can, and work with suppliers across the West Country to reduce our carbon footprint as much as possible. Why Three Hares? The symbol of the three hares arranged in a circle, is an ancient one thought to originate in Buddhism and the Far East around the 6th or 7th century. Quite how the symbol came to be in Devon, or why it is so prominently featured around the county, is a bit of a mystery. The symbol itself is as much of a puzzle as its meaning; each hare is shown with two ears, yet only three appear at any one time in the motif. The Three Hares motif has been found carved in Medieval churches across Devon, and has been associated with the tin miners on Dartmoor as well as the Holy Trinity. It is the strong Devon links which inspired the name of the bakery, as well as the long history of the symbol travelling from China along the Silk Road, where traders and merchants brought back treasures from the Orient to the West. This journey through different cultures reflects our baking philosophy, drawing inspiration from around the world in our bakes, and bringing that home to our baking in Devon. Whilst the Three Hares might still be a bit of an enigma, we do know one thing - our bakes are not! Try us and see for yourself. It's been very quiet at Three Hares here recently. I've been looking after my mental and physical health and it's been a difficult few months but... Bake Off is back on our screens and I couldn't be happier!

Back in 2018 I was watching Bake Off on a psychiatric ward in North Devon. GBBO and Baking has always been my therapeutic place, and has helped me through some horrible times. But sometimes I have to step back to make sure that my first love doesn't become something I hate because I'm working too hard at it. And that's what I've been doing - back to basics, taking time for myself and doing a few bits of baking for my friends and family but no commissions.

I'm already a massive fan of Tasha and Saku, and as always I'm so pleased to see fantastic disability representation and accommodations from Bake Off with Daryl.

I'm staying quiet for now while I continue to recover, but a new season of Bake Off always deserves a post!

To all my lovely customers,

Due to personal health reasons, I am temporarily closing my order books for wedding and celebration cakes.

Many of you know that I run Three Hares alongside a full time job, and at the moment I am not coping with doing both. I have struggled with my mental health for a long time, so I know I need to put my wellbeing first for a bit!

I will put a note up when I'm open for orders again, but always happy to chat and discuss future orders, so I'm still available to message (even if it takes me a minute to reply!).

🌹 RASPBERRY, REDCURRANT & ROSE 🌹

I had so much fun with this cake - a delicious raspberry yoghurt and redcurrant sponge with rose extract, and a raspberry and redcurrant mascarpone buttercream with rosewater.

Rose is a difficult flavour to get right - too much and it is overpowering, too little and it gets washed away. This cake balances the floral flavours beautifully with the tart red summer fruits, and is perfect for a birthday celebration!

Simple and elegant, but hiding a surprise inside... I absolutely loved making these cocktail themed cakes for Jess & Ed'...

I'm back from my jaunt around the low countries! I've spent the last two weeks cycling around the Netherlands, Belgium and Northern France, and it has been ~fabulous~. I have eaten my body weight in Belgian chocolate and amazing patisserie, but I have missed being in the kitchen!

This beautiful gluten free Devon apple cake is destined for this weekend, so make sure you grab a slice while you can!

Vanilla sponge, filled with creme patisserie (that posh custard to you and me), roasted rhubarb & orange, & custard buttercream. Topped with candied rhubarb.

All the rhubarb from this one came from my garden! I absolutely love this cake, from the colours to the silkiness of the custard buttercream. It feels like spring has finally sprung!

🍏 OMA'S APPELTAART 🍏

I spent last week back in the Netherlands, where I grew up between 9 and 18. The Dutch might be known for fries 🍟 and pancakes πŸ₯ž, but a proper appeltaart is honestly one of the best things to ever come out of Holland.

This recipe for Oma's Appeltaart, or Grandmother's Apple Pie, is adapted with a gluten free pastry, and crammed full of apples and raisins, and a hefty sprinkle of cinnamon.

Traditionally the pie would be served with squirty cream and/or ice cream, and drunk with a strong cup of black coffee β˜• (or if you're like me, a warme chocomel/hot chocolate!).

Once it's cooled and packed up, this fabulous pie will be available (with squirty cream!) at this weekend!
