ings. We pride ourselves on using locally-sourced ingredients where we can, and work with suppliers across the West Country to reduce our carbon footprint as much as possible. Why Three Hares? The symbol of the three hares arranged in a circle, is an ancient one thought to originate in Buddhism and the Far East around the 6th or 7th century. Quite how the symbol came to be in Devon, or why it is so prominently featured around the county, is a bit of a mystery. The symbol itself is as much of a puzzle as its meaning; each hare is shown with two ears, yet only three appear at any one time in the motif. The Three Hares motif has been found carved in Medieval churches across Devon, and has been associated with the tin miners on Dartmoor as well as the Holy Trinity. It is the strong Devon links which inspired the name of the bakery, as well as the long history of the symbol travelling from China along the Silk Road, where traders and merchants brought back treasures from the Orient to the West. This journey through different cultures reflects our baking philosophy, drawing inspiration from around the world in our bakes, and bringing that home to our baking in Devon. Whilst the Three Hares might still be a bit of an enigma, we do know one thing - our bakes are not! Try us and see for yourself.
