The Gillespies journey...where did it all start....
Built from markets, shops, community and creativity.
Our journey started in 2017, originally trading as Once Upon a Tier. We began by sharing our bakes at local markets, including Newcastle Quayside Market, before travelling across Northumberland and building a loyal local following.
That support helped us grow into our own shops in Wallsend and Blyth, while also supplying bakes to other local businesses. Those years shaped the Gillespies standard: quality, detail, creativity and a personal touch.
As the business developed, we became known for couture-style cakes and beautiful celebration pieces. Now we are using that experience in a new way — teaching people the techniques, confidence and creativity behind cake decorating.
Our classes are made for real people, whether they are complete beginners, parents booking for children, friends planning a night out or groups looking for something different. You do not need experience. You just need to turn up, enjoy the session and create something you are proud to take home 😊
