What did we make this week? Pt 18

🌀 465 Raspberry Swirl Traybake Slices
I mixed some flour with the jam this week to help make the jam swirls more prominent and sink less. Was happy with the result so I’ll be doing this next time too 🙌

🍪 340 Cookies
I’ll be honest, this figure is a guess as I’m currently writing this on an airplane without my laptop in front of me! 🙈🤣
I had a request to make the Toffee Apple Cookies a little flatter and less domed, to match the other flavours. My theory was that the freeze dried apple pieces were absorbing a lot of the moisture which caused the cookies to dome. My solution was to add 20ml additional liquid to the cookie dough and then have a play around with the quantity of apple. 🤓 The batch with 50% less apple was a winner, but I need to find the balance between a good spread and a decent amount of apple. I’ve a feeling more experiments are pending 🙌

10/10 week, currently feeling very privileged that I’m self employed and can move things around to go on last minute holidays 🫶🏼 🇮🇹

What did we make this week? Pt 17

🌟 Mixed Cookies
I got to see our amazing dog walker this week who is currently on mat leave - I obviously couldn’t go empty handed so baked these fresh for her! 🫶🏼

🍊 450 Jaffa Drizzle Cakes Slices
The unit smelt 10/10 making these! 😏

🍪 342 Cookies
White Chocolate and Raspberry are my fave but what do we think to a Triple Chocolate Cookie? I am tempted to start perfecting the recipe now ready for new menu in Sept/Oct 🤔

🥕 Individual Carrot Cakes
I couldn’t let my friend’s 30th bday go by without making her fave cake!
For the icing, I used vanilla powder that’s come all the way from Sri Lanka (didn’t think my homemade vodka/vanilla extract would be a vibe) and I was v happy with the outcome 🙌

🍕 Margarita Pinwheels
Whipped these up for my friend’s bday party today. Sheet puff pastry, tomato purée, mozzarella, cheddar and herbs. Roll them up, slice and bake on 180 until golden. Super simple and super tasty!

9/10 week, feel like I’m in a nice routine now with my baking days. Only took me a year 🤣

What did we make this week? Pt 16

🌀 465 Raspberry Swirl Traybake Slices
NEW! This is a fluffy lemon sponge with raspberry jam swirled through, topped with a lemon icing drizzle. I’m going to play around with a different way to make the swirl more prominent but I was happy with my first mega batch!

🌟 355 Fruit Crumble Slices
NEW! Well, kind of new 🤣 They’ve been brought back by popular demand!

Another top up of cookies as these sold out last week!!

8/10 week, almost managed my half day on Friday so happy with that, but ran out of gastro trays so didn’t make as many Fruit Crumble Slices as I’d planned!

What did we make this week? Pt 15

All the cheesecakes this week! I had leftover ingredients that I of course didn’t want to waste - so made some more Cookies & Creme Cheesecakes which have made a comeback as part of the new menu.

🌟 Brownie Stack for 45
After the brownies were able to rest in the fridge for the ultimate fudgy texture, it was time to assemble them. Gutted I needed to use every last piece to be honest 🤣

🌸 680 Caramel Flapjack
Brand new recipe, look how delicious these look! I was told “ooh they look healthy” but I’ll be honest, the recipe includes 7.2kg of golden syrup!! 🙈 So tasty though!

🍊 450 Jaffa Drizzle Cakes
These are back by popular demand 🙌
I could have sworn I took photos of these but apparently not 😩

🧁 9 No Waste Orange Cupcakes
Had leftover Jaffa Drizzle batter but not enough to fill a whole tray, so baked these as cupcakes ready to decorate and gift to family and friends 😊

Made my usual flavours of White & Raspberry Cookies, Chocolate Chip and Toffee Apple.

Made a few top up batches of these for the current menu:

And then we got onto the NEW cheesecake flavours!! Had to try a Cookies & Creme for second breakfast at 7am…can confirm they’re 10/10 😉

What did we make this week? Pt 11

A bit of a different one this week as we’re transitioning from current to new menu, so doing a lot of work in the background and not much baking yet! However I’ve not been away from the kitchen too much…

Last week’s samples for my biggest corporate customer were:
🌟 Raspberry Swirl
🌟 Cassis Drizzle Cake
🌟 Ginger Zing
🌟 Jaffa Drizzle Cake

And we are going with Raspberry Swirl and Jaffa Drizzle for the new menu! Ginger Zing was almost a winner but we were concerned that the ginger flavour could taint the flavour of the other cakes in the box. Always important to think about the full customer experience!

Also this week I had the pleasure of making an order that was delivered to JLR. Got some great feedback and another order for next week, too! We made:

I didn’t realise how busy I was until I’ve written this out!! What a 10/10 week! 🙌

🍋 480 Lemon Crumble Slices
12 large trays of these bad boys and not a single one failed QC 🥳

🍊 254 Jaffa Drizzle Madeleines
I was meant to make 4 batches but I ran out of eggs so 2 batches had to do! Quick re-jig of the production plan and we’re all good!

🍪 644 Cookies
(213 Chocolate Chip, 224 White Choc & Raspberry, 207 Toffee Apple)
I was soo grateful my Mum helped me this week - I made the cookie dough while she spent 3 hours portioning them all up ready for freezing, then baking a few days later. What a woman!

🌿 705 Mint Choc Traybake Slices
Hand decorating 47 mint choc cakes with RSI is NO JOKE. I did it though, and also had no waste which was great but did mean no cake pots this weekend!!

🫶🏼 Chocolate Chip Cookies
I had to take my car to the garage this week to get some work done - got up at 6am to bake some cookies for my mechanic, and they were still warm when I got there. Just trying to spread some joy and brighten people’s days a long the way (I think it worked ☺️)
I also made cookies for a very good friend of mine who has her sister visiting from America. She has been one of my biggest supporters since the very start of Queenie’s and I couldn’t be more grateful 🥲

9/10 week, over 2100 items made and I’m feeling blessed to have a fantastic support network around me!

What did we make this week? Pt 6

🌸 237 Raspberry Madeleines
As always, these were satisfying to make! It took me an hour to hand dip and decorate them all - so so worth it!

🍋 232 Lemon Crumble Slices
I love the smell of these in the oven! Also shout out to my husband for slicing these for me! 🙌

🤩 455 Cookies & Creme Traybake Slices
I lost far too many of these to QC which was really annoying but at least they were heading for cake pots!!

🍊 763 Sticky Marmalade Cake Slices
I discovered a new way to brush these with marmalade. I used the side of a spatula rather than a silicone brush…it meant a thicker marmalade layer, and it was easier to brush on. Winning!

🌺 4 Mother’s Day 8” Lemon Crumble Slice
I loved packaging these up - I like to match the colour of tissue paper to the theme if ever I can, and this time I used a flowery tissue paper. Super cute!

🌷 1 Mother’s Day Lemon & Vanilla 8” Cheesecake
I mean, I was just gutted I didn’t make two of these!! 🤣

🍋 8 Lemon & Vanilla Cheesecakes
I had leftovers from the Mother’s Day order, so made some more mini cheesecakes (was tempted to eat it all but I didn’t 😇)

🌟 12 Cookies & Creme Cake Pots
So this week’s cake pots for family and friends were cookies & creme flavour. I had to try one and I’m not afraid to say that a cake pot after dinner on a Saturday is just part of my weekend now 🤣

I can’t lie, I’ve had a 5/10 week, making over 1700 items has taken its toll but looking forward to a day off tomorrow 🙌

What did we make this week? Pt 5

🍊 249 Jaffa Drizzle Madeleines
Each madeleine is hand dipped in a fudgy chocolate icing, then sprinkled with orange. Time consuming but always so worth it.
I made 2 batches and only dropped one madeleine in the icing this week 🙌 🤣

🍋 716 Lemon Drizzle Traybakes
These are every Lemon Lovers dream! The sponges include lemon extract, they’re topped while warm with a homemade lemon syrup, drizzled with a lemon glaze and sprinkled with freeze dried lemon. You may think they sound too lemony but you’d be wrong, I think they’re perfect 🤣

🥰 9 Lemon Drizzle Cake Pots
I make cake pots each week with any leftover cake bits or pieces that didn’t pass QC! Not for sale - just for family and friends because you know how I feel about waste!! 🤣

🍪 273 Cookies
(95 Chocolate Chip, 109 White Choc & Raspberry, 69 Toffee Apple)
It was so satisfying baking the cookies and spreading them out across the kitchen - this is the most I’ve done at once, and seeing them all gave me a moment of realisation that this is my actual job like whaaat ☺️

🌹 57 Rose & Raspberry Cheesecakes
I love how the raspberries turn these cheesecakes pink! They’re topped with edible rose petals which makes them look so pretty 🤩

🍋 101 Lemon & Vanilla Cheesecakes
A lemon and vanilla cream cheese filling with a lemon curd swirl on top. I purposefully made more of this flavour because they’re so flipping good!! I may or may not have brought 4 home with me…

10/10 week, over 1400 items made and I am thriving 🙌
