What did we make this week? Pt 18
🌀 465 Raspberry Swirl Traybake Slices
I mixed some flour with the jam this week to help make the jam swirls more prominent and sink less. Was happy with the result so I’ll be doing this next time too 🙌
🍪 340 Cookies
I’ll be honest, this figure is a guess as I’m currently writing this on an airplane without my laptop in front of me! 🙈🤣
I had a request to make the Toffee Apple Cookies a little flatter and less domed, to match the other flavours. My theory was that the freeze dried apple pieces were absorbing a lot of the moisture which caused the cookies to dome. My solution was to add 20ml additional liquid to the cookie dough and then have a play around with the quantity of apple. 🤓 The batch with 50% less apple was a winner, but I need to find the balance between a good spread and a decent amount of apple. I’ve a feeling more experiments are pending 🙌
10/10 week, currently feeling very privileged that I’m self employed and can move things around to go on last minute holidays 🫶🏼 🇮🇹
