We’re looking for an experienced baker who’s ready to hit the ground running.

Someone who knows their way around a bakery, holds themselves to a high standard, and doesn’t need someone standing over their shoulder.

This is a short-term role, but we’re also looking for the right people to join our growing team on a more permanent basis. So if you want to treat this as a bit of a trial run, that works for us too!

It’s wood-fired sourdough, done properly, with a team that genuinely cares about the work.

Based in Comrie, Perthshire. Think mountains, rivers, and a real community. For the right person, the location alone is worth the experience! We can help with finding somewhere to stay.

Real sourdough matters. So do the people who make it.

We’re hiring. This is physical, hands-on work, a real pace, and clothes covered in flour. It also offers something most jobs don’t, the chance to learn a genuine craft in a bakery where standards are high and where what you make matters.

WILDHEARTH bakes things differently. Wild-fermented, slow, handmade in Perthshire, traced back to the grain.

Chefs and our hospitality partners serve it because they can taste the difference. Our community buys it because they trust what goes into it.

Keeping that standard takes people who care about the process, take pride in the product, and want to build a skill worth having.

While professional experience is definitely a plus, you don’t necessarily need it. Just the right attitude, pride in what you do, a solid work ethic, and a genuine desire to learn.

A minor preoccupation of mine recently has been the fascinating and growing body of research into baguette nubbins. I am therefore providing some of the dictionary definitions I have recently come across.

My question to all you nubbins lovers out there relates to the first, namely ‘nubbotypes’. The image above depicts a few of these, and I would appreciate your help to name them. The large (top) has been dubbed as the ‘clown nose’ nubbin, though other nomenclature has been used. There are, of course, many more than shown above, a glaring omission being the ‘hypodermic’ nubbin, so called because of its long, needle-like form.

Nubbotype/ˈnʌbətaɪp/noun
The set of observable characteristics, traits, or physical properties of a nubbin
‘I’ve recently been researching the various nubbotypes found in renaissance still life paintings’.

Nubbinaceous/ˌnʌbɪˈneɪʃəs/adjective
Having the shape of a nubbin
‘That dude makes the most nubbinaceous baguettes I’ve ever seen’.

Nubbinicious/ˌnʌbɪˈnɪʃəs/adjective
The extent to which the nubbin/s of a foodstuff (usually a baguette) results in excellent flavour
‘Damn those baguettes are nubbinicious!’
