And just like that we’re fully into Autumn… I absolutely love this season 🍂

This means the autumn batch of wedding cake sample tasting boxes are ready to go out from next week. 🎉🍰

All my ingredients are organic and fair trade where possible. It’s so important for the environment, the land, wildlife, us, and the future. It’s a responsibility I take very seriously. Using the best ingredients also makes a huge difference to the quality of the cakes. Something I’ve been very proud of championing for years.

Such a beautiful, sunny day for a marquee wedding by the river for Izza & Alex. Delicate blush pink David Austin style sugar roses and buds adorned this cake. I returned in the evening to dismantle it and retain the sugar flowers for my couple to keep. This is an option I offer should couples want it. It’s often easier on more complex designs for me to dismantle my own work.

They had a fabulous evening playlist and we were singing and grooving in the catering tent! 💃🏻 Great tunes, Scott!

Fortunate to see the happy couple as I left and they were delighted with their cake. 🥰

It was lovely to be back on home turf on the Suffolk coast in June. is a beautiful hidden gem of a venue tucked away in magical woodlands in an area of outstanding natural beauty. Elegant and classical was my remit, with a colour scheme of timeless white, ivory and green. Handmade delicate sugar flowers adorned Lizzie & Adam’s cake and make a perfect keepsake. Congratulations to you both!

Congratulations to Melanie & Laurence who held their wedding ceremony and reception at on Saturday.

Wonderful to work again who provided me with these beautiful blooms to play with.

They chose a fully-ganached and fondant-covered cake with these delicious flavours: Dark Chocolate Truffle with white chocolate buttercream (always super popular with my favourite Ecuadorian chocolate from Suffolk-based ); Little Scarlet Strawberry and Bollinger Champagne (Summer in a cake! Delicate jam from just down the road from me and the perfectly quaffable ); and lastly Amalfi Lemon & Limoncello (zesty, fragrant, Italian lemons team up with the intense flavour of the limoncello resulting in one of our most popular flavours of all time).

Our Story

Apple Tree Cake Design was founded in 2012 by award-winning cake designer, Rebecca Allen-Pugh, and is based in Tiptree, Essex. With a Swiss Master Baker in the family her love affair with baking and sugarcraft started at a young age. Specialising in sugar flowers, she combines beautifully intricate designs with classical and contemporary finishes. The emphasis is as much on the decoration as the cake within; she ensures she uses only the best ingredients for her clients’ cakes, resulting in countless rave reviews on her work. Rebecca won the award for the Best Wedding Cake Designer for the East of England at The Wedding Industry Awards 2016, and has also been listed in the UK Top 50 Wedding Cake Designers by GoHen for the last 4 consecutive years.
