As most of you will know I am currently between kitchens due to life throwing a few curve balls my way! However I have been making the most of this time by using it to train in new skills, trial new recipes, forage local produce and generally create new delicious bakes! ✨

'Sticky toffee pudding cake with Madagascan vanilla custard frosting. Decorated with premium callebeut white chocolate callets, Moroccan dried rose buds and lashings of caramel sauce'.

✨ Bramble and Broom Bakery is on holiday doing plenty of yums research ✨
Day One in Kent. Stopped off in Royal Tunbridge Wells. Definitely recommend 'Gails' Bakery and 'Juliets' for incredible bakes. Checked out 'The Pantilles' area (famous for the regency architecture) and saw my dream copper pans in a stunning cookware shop. Also found a vintage fairy book in one of the many charity shops. We are staying in a Cranbrook BnB where two of the local 18th century artists used to draw. Saw a lovely doggo.

'Chocolate Courgette and Blackberry Coulis Cake'
Description - The most tender crumb sponge made with dark chocolate cocoa and local courgettes from Coggeshall allotment, filled and topped with homemade, cinnamon spiced, Blackberry Coulis. The blackberries were handpicked from Coggeshall allotment also. Then finished with generous rossetts of chocolate Russian buttercream ✨

Description - Super moist, tender and tangy Rhubarb stuffed sponge (using fresh and local Rhubarb from the Coggesgall allotments - thank you Jo Cornell 🙏) , topped with baked and buttery Cinnamon spiced crumble, finished with a delicious Rose and premium quality white Belgium Chocolate infused whipped cream.

'Banoffee Pie Chiffon Cake' - Slices available now! ✨
Description - A brand new bake of super soft, melt in the mouth, Madagascan vanilla bean chiffon sponge, with a generous layer of dulce de leche, mounds of luxurious chantilly whipped cream and fair trade banana slices. This little beauty is then topped with my secret blend banana pudding whipped cream and sprinkled with a dusting of organic cinnamon and curls of premium dark chocolate 💜
