When your wedding cake starts with a beautiful glass charger… 🤍

For her wedding to Mark , Giulia wanted a cake that reflected her Italian heritage, with the wider, shallower tiers of a more traditional Italian-style wedding cake.

But it was the styling of their day that really inspired the detail.

The glass chargers from were just exquisite with an ornate beaded pattern, so I recreated it across the cake by hand piping each tier in royal icing.

And then there were the flowers… Giulia sent me an image of a wonderfully relaxed bouquet that she loved, which became the inspiration for the sugar and wafer paper flowers and foliage I created for the cake.

We explored three initial cake design concepts before we arrived at THE ONE, bringing all those little elements together into something completely personal to Giulia and Mark.

And I have to give a special mention to Giulia’s (now) sisters-in-law, Jo and Tracey, who headed up so much of the organisation. They were absolute superstars and such lovely ladies to work with.

From a glass charger and a favourite bouquet to a completely bespoke wedding cake — that's the magic of cake design!

James & Spencer 💜

I had the absolute pleasure of creating something a little different for my adorable couple, who came all the way from the USA for their wedding at in June.

They knew they wanted purple and silver to match their colour scheme, and they knew they wanted some marbling incorporated into their design (along with a fabulous surprise when they cut into it!), but apart from that, it was over to me.

Now, in my view, marbling can sometimes look a little heavy and, with such a bold colour, my challenge was to create something that hit the brief whilst still keeping true to my signature organic, light and airy style.

So, in came dreamy sugar clematis and trailing vines to soften the marbling and add movement, along with just a hint of geode sugar crystal work in a deep, glistening shade of purple, which was mesmerising when the light hit it inside the castle!

As for the surprise element… purple velvet sponge hiding inside the bottom and top tiers for a little sophisticated drama! 💜

This one was incredibly special 🤍

July brought me one of the highlights of my business journey so far and that was creating this cake for my baby brother and his beautiful new wife (and about flipping time as well!
😉).

Every flower, every leaf, handcrafted from sugar; delicate roses, trailing foliage and tiny gypsophila sprigs added softness and movement.

Big shout out to .events who created amazing floral displays around the venue and to the fabulous staff . Everything was just perfect! xx

When I first launched my business way back in 2013 (!), I had no idea how much joy creating edible flowers would bring me, and I certainly never imagined that experimenting with sugar and wafer paper would result in the most incredible blooms.

Question: Do wedding cakes have to be white?

Answer: Absolutely not. In fact they should always reflect the couple they are for and here's a fantastic example:

The dramatic effect of this photo is perfectly for the gothic tone of the keep at Hedingham Castle.

It also represents Lois & Jaye down to a T; wonderfully unique with a bold, artistic look and the warmest, most genuine spirits. It was an absolute honour working with them to create this statement cake.

Using my contouring technique I was able to blend and shade different tones to give a beautifully aged, dimensional look to the cake.

Delicate hand crafted wafer-paper flowers and soft flowing foliage added lightness and movement, contrasting with the deeper tones of the cake.

First time making Wisteria from sugar and I absolutely loved how it turned out.

As a rule, I've always avoided purples shades in my flower creations (I think I have PTSD from back in the day when Cadbury purple was the 'in' colour & was not used well!), so achieving a delicate and soft shade was my priority here.

Teamed with a collection of peonies, different rose varieties and foliage, all made entirely of sugar!

Soft peaches and classic creams - one of the most romantic shade combinations and definitely a favourite of mine - so what an absolute dream it was to create this beautiful cascade of sugar tulips and roses for Esther & Neil’s cake, and the best part...
