No faff, no fuss just really good cake (that happens to be gluten-free). We focus on taste as well as design only using the finest locally sourced products. All of our curds and jams that go into our bakes are homemade. What an absolutely amazing day we had yesterday at Apple Day at Burwash Manor! Such a fantastic event, the sun was shining, the atmosphere was brilliant and the horsebox looked right at home with all the autumn decorations! A huge thank you to everyone who came to see us, bought some goodies or stopped for a chat. We had such a lovely day and it was wonderful to be part of it all.Thank you to Burwash Manor for having us, we absolutely loved it!

And whilst we're here, I've got some rather exciting news coming soon for The Phoenix Cake Company! I've been working on something behind the scenes and I can't wait to share it with you all.

This saturday we're heading to the beautiful Burwash Manor in Barton, just outside Cambridge, for their annual Apple Day! If you've never been before, it's such a fantastic event, with a lovely atmosphere, plenty to see and do and a real celebration of all things autumn. And of course, I'll be bringing the horsebox along, packed with homemade cakes, cookies, brownies and some rather special apple-inspired treats. If you're gluten free or coeliac, please spread the word! Everything I bake is 100% gluten free, made in my dedicated gluten-free kitchen, so you can come along and enjoy all the goodies without feeling like you're missing out. One of my favourite things about doing these events is meeting people who haven't been able to enjoy a proper slice of cake at a day out for years So please tag your gluten-free friends, share this post and help me reach anyone who might not know we're going to be there.

You don't have to be gluten free to enjoy our cakes either!

One thing this year has taught me, Not every opportunity is a good opportunity. And sometimes the bravest thing you can do as a small business owner is walk away. I think when you start a business you’re so grateful for every opportunity that comes your way. You say yes. You make it work. You bend over backwards. You rearrange family life, bake until ridiculous hours, load the van, tow the horsebox and turn up. Because that’s what you do.
But somewhere along the way I’ve realised that being grateful for an opportunity doesn’t mean you have to hold onto it forever. Businesses change. People change. Priorities change. And sometimes something that once felt right simply doesn’t anymore. So from now on, I’m going to be a little more protective of this business I’ve built. Where we go. Who we work with and where I put my time and energy. If something doesn’t align with us anymore, that’s okay. We can walk away.

Because behind every Phoenix event there are hours and hours that nobody sees. The planning. The shopping. The baking. The packing. The loading. The travelling. The setting up. And then standing behind that hatch giving absolutely everything I have and I want that energy to go into places where Phoenix feels at home. Most importantly, I want to keep taking this little blue horsebox to places where you want to come and find us. Because you lot are the best bit.

The familiar faces at the hatch. The people who travel to find me. The coeliacs who tell me they haven't had that particular cake in years. The families who come back event after event. That's the bit I never want to lose.
So there are going to be some changes. Some new places. Some new events and probably a few leaps into the unknown. But I think that might be exactly what Phoenix needs. Onwards.

It’s all go in the Phoenix kitchen today as I start baking for another busy weekend!
On Saturday you’ll find us at IWM Duxford for their End of Season Flying Finale we’ll be by the AirSpace hangar with the horsebox loaded with all your gluten-free favourites and the coffee you all love!
Then on Sunday we are back at Saffron Walden for their monthly market on the green This is the last one until the Christmas market in December, so I’ll be baking up a storm for you all!

Two days, two brilliant events and LOTS of cake incoming.
As always, everything is 100% gluten-free and coeliac safe.
See you this weekend!

Since my diagnosis one thing I've learnt is just how incredibly loyal the gluten-free community is. When we find somewhere we can actually eat without worrying, we remember it. We tell our friends. We tag people in posts. We recommend it in gluten-free groups.We travel further than most people would for a piece of cake. And we come back again and again.

I've had people find me at events simply because somebody else told them, You need to go and find the gluten-free horsebox. I've had customers come back to see me at completely different events, people buy enough cake to take home for later, and people genuinely excited because they can choose anything they want from the counter. And I don't think I'll ever stop appreciating what that means. Because when you're used to checking labels, asking questions and usually having one option being able to walk up to a counter and hear "everything is gluten-free" is a pretty big deal. So this is really just a little thank you. To everyone who buys from me, recommends me, shares my posts, tags their gluten-free friends and comes looking for that little blue horsebox

I see you. And you're the reason I get to keep doing this.

A whole day of sausages, b**r, c***r and family fun at Drapers Farm, and I’ll be there with the horsebox serving 100% gluten-free cakes, bakes and freshly made coffee all day. There’ll be bouncy castles, plenty going on for the kids and, hopefully, lots of you coming hungry!

Well what a weekend that was!

Another Battle of Britain Air Show done at Duxford and Saturday was absolutely amazing! You literally cleared me out of cake! Sunday the good old British weather had other ideas, but that’s outdoor events for you!
I’ve had a few days off since, including a lovely night out with my girls on Monday to watch Practical Magic 2 which was very much needed! But today it’s back to it and time to start getting ready for this weekend.
Only one outing for the horsebox this week and that’s Sunday at Maldon Rugby Club for Ciderfest!
Then we are well and truly into my favourite part of the year autumn events, fireworks and CHRISTMAS!
