Evening all,

As we move in to September and the taile end of Summer the Bake List begins to have a more autumnal feel.

Bakers accross the country will be relieved by the lower temperatures!

Our September specials make use of the last of the Summer fruits, our stash of bakery made jams and compotes and new season stone fruits.

Biscoff is making a return in a Morning Bun and, in homage toJills favourite chocolate bar, we're making a 'snickers' style twice baked. 

After a lot of requests we are bringing back quiche this month and sweetcorn, which is in season and plentiful, will be appearing in a twice baked roll pepped up with jalapeno and smoked cheese.

This months Focaccia special is influenced by one of my favourite pasta dishes 'cacio e pepe'. Lots of freshly grated parmesan and toasted, cracked black pepper folded through the dough - perfect for cooler days and soup dipping....

Evening all,

Having all enjoyed a good break we're back in production at the bakery this week getting ready to welcome you on Saturday.

I'm busy planning our bakes into Autumn and beyond but in the meantime we've put together a Bake List specifically for this Saturday that has a few 'one offs' to make the most of the season.

It's a difficult one to call in terms of how busy we'll be... It's the last Bank Holiday before Christmas (mad isn't it....), the last weekend of the school holidays and the wretched, on-going roadworks remain a worry.

We've planned a good sized bake so fingers crossed a fair few of you will be out and about in the centre this Saturday.

Evening all,

Our little team has been incredible during these endlessly hot weeks. They have managed bread and pastry production in conditions a million miles away from ideal and done so with their usual good humour.

Whilst we are aware it's not long since we had a break It was inevitable that, at some point, we wouldn't all be able to co-ordinate our holiday plans in order to cover each other throughout the remainder of the Summer. Next Saturday is one of those times.

We like to think that the pros' of being a small, tightly run unit outweigh the cons' but it will, inevitably mean that, from time-to-time, we may not be able to keep the show on the road week in, week out.

Our small but mighty team of people care deeply about our products, our customers and each other, all of those things are inextricably linked and are what makes Rise what it is.

I hope you will understand how well earned their break is and we look forward to welcoming you back on the Bank Holiday weekend.

Evening all,

As we continue to ride the  roller coaster of the school summer holidays judging what and how much to bake is keeping us on our toes!!  Last week saw us selling out by 11.30 and yet the week before was a different story.

This weeks we've tweaked things upward a little and have swapped a few things in and out of the bake list.  Fingers crossed it's a good call!!

Of particular note are Geoff's figs.  Geoff and Denise have been loyal and regular customers since day one and have always been the most generous of souls with their words of encouragement and support.  This morning Geoff popped his head through the door with a bag of perfectly ripe figs freshly picked from a tree in their garden a short stroll from the bakery.  This has prompted a last minute addition to this weeks bake with a fig and mascarpone cream tart now 'in the mix' for the Saturday.

Courgettes (which are, in my opinion,  very under-rated) are plentiful and in season so we're using them in a roast courgette & gruyere scroll to sit alongside our regular spinach & ricotta.

Evening all,

As many of you will know, major road works are due to start along Old Street and beyond in the next week or two and they will run until November.This will, inevitably, be stressful for people trying to park and will almost certainly have some effect on all all of us trading in the area. The uncertainty is a worry but we hope to ride this one out without it having too much of an impact. 

As Saturday is the first of a new month we are 'retiring' our ham and dijon tart and, by popular demand, bringing back the ham & cheddar croissant roll.

Adam has gathered a good few blackberries again this week so the blackberry & apple crumble gets another week on the counter.

Evening all,

As our hot dry summer continues we find ourselves with an unexpectedly early and abundant crop of blackberries in and around our garden. We wouldn't normally expect these lovely fruits to ripen until mid/late August at the earliest and they are simply too good to ignore. So, for the next couple of weeks or so we are going to be using them in a twice baked croissant roll in place of the raspberry version that was on our original specials list.

Traditional summer fruits will still be strongly represented! Raspberries will remain in the Peach Melba Cruffin, we'll be making a few Raspberry and Lemon tarts and strawberries will continue to feature in our 'Victoria' Butter Cake. UK blueberries & some of the nicest cherries we've had in a few years will continue to feature until seasonal supply comes to an end.

Evening all,

With the heat on-going and finding ourselves a man down during our bake shift we've had to make some adjustments to our list.

All pastry is a challenge in this weather but certain products just don't hold up well in hot humid conditions. Other things simply take too much time to assemble given how stretched we are during the bake. Some things had to give!

The adjustments we've made will make our life a little easier whilst keeping a good range of 'bits and bobs' that will be good to eat.

We may tweak things a little more as we progress into the school Summer holidays as it is always a slightly quieter time for us.

Evening all,

It's been a 'nail biting' time at the bakery these last couple of weeks but finally, after a bit of 'jiggery pokery' and a lot of expertise from our brilliant fridge engineer, our chiller is working reliably and ready to be brought back into service.

Managing the dough in the upcoming heat will present other challenges but those we can deal with.

Because we've lost a couple of weeks in July already and have a Saturday towards the end of August when we are closed again we are running the new Bake List accross two months.It's likely that we'll swap in and out a few specials during the Summer but we're putting lots of new, seasonal lines together to give you plenty of choice.
