Another sponge cake from last week - Happy Birthday to my sister 💖🎂
One of the perks of having a baker in the family definitely has to be the birthday cakes!

This year’s cake was a strawberry sponge layered with vanilla buttercream and a lemon curd swirl, coated in silky vanilla buttercream and finished with more lemon curd swirls and freeze-dried strawberries 🍓🍋

Fresh, light and full of flavour — I think this flavour combination is going to be a very popular one this year ✨

I might be biased… but this one could be one of my favourites yet 👀

I’ve been a little quieter on here this week… but behind the scenes it’s been a very different kind of baking week — full of sponge cake 🎂✨

With several exciting events taking place over the next few days, I’ll be sharing plenty of photos afterwards, but for now… here’s the final design in the Summer Cupcake Collection 🍉☀️

Yesterday’s wedding at Birtsmorton Court was truly something special ✨

G&L have been an absolute dream to work with throughout the planning process for their big day, and seeing everything come together in such a beautiful setting was incredible 💍🤍

For their wedding breakfast dessert, guests enjoyed:
🤎 Tiramisu cheesecake
🥭 Mango & passionfruit cheesecake
🍋 Gluten-free vegan lemon cheesecakes in individual pots

Then later in the evening came the sweet treats table — packed with an array of brownies and caramel shortbread for guests to tuck into ✨

Not every couple wants a traditional sponge wedding cake… and honestly? I absolutely love that 🍫✨

From brownie stacks to baked cheesecakes, more couples are choosing wedding desserts that feel a little more *them* — fun, personal, memorable, and most importantly… delicious.

One of my favourite parts of the process is the wedding taster sessions, where couples get to mix and match flavours, try different combinations, and create something completely unique for their day. Whether you’re torn between brownies and cheesecake (or decide you need both 👀), tastings are the perfect way to make sure every detail feels right for you.

✨ What a week it’s been… ✨

Last week was packed full of birthdays, weddings and LOTS of sweet treats 🍫🧁💍

First up — a birthday surprise for one of my lovely brides, Katie 💕
As a huge fan of the M&S peppermint bark cookies, I couldn’t resist creating my own dupe version since they’re not around this time of year 👀🍪

Her fiancé also ordered an XS version of one of their wedding cheesecakes as part of the celebrations… although I’ll be keeping that flavour a secret until their big day 🤫✨

Then onto two beautiful weddings…

📍 7th May — The Rising Sun, Bishops Cleeve
Featuring this absolute showstopper of an XL double chocolate brownie cake, topped with a tower of 50 brownies including Strawberry & Cream and Rocky Road flavours 🍓🍫

📍 8th May — Guyers House Hotel, Corsham - an evening dessert platter setup filled with lemon tarts, cupcakes, brownies, cheesecake pots and Eton mess pots 🍋🧁🍓 Guyers House Hotel & Restaurant

Weeks like this remind me just how much I love creating desserts for life’s biggest celebrations 💕
