For my birthday cake this year I had the daft idea of making Lando Norris's champion helmet in cake! Wow this was stressful. It's not perfect but I gave it a go and it tastes good!

Rhubarb is something that I love to eat and bake with but I know it's not everyone's cup of tea.

I previously posted a couple of years ago that I'd managed to come up with a rhubarb cookie having had some from M&S when I worked there but they then discontinued. I've made them a number of times since but always wanted to elevate them to a rhubarb and custard cookie but couldn't work out how to actually do the filling and make it not taste too sweet or artificial.

I finally had a brainwave and tried an experiment tonight and I am very happy with it and will be testing them out on my colleagues tomorrow!
