🍞 A Little Garden Bakery Update 🌿

Firstly, I just want to say a huge thank you to each and every one of you who continues to order, support and recommend The Garden Bakery. I’m honestly so grateful for every single loaf you buy and every lovely message I receive. It means more to me than you probably realise. ❤️

As many of you know, I’ve normally been delivering to The Leaf Lounge Café and my regular customers on a Monday. But because proper sourdough is a slow, three-day process, Monday deliveries mean that almost my entire weekend is spent preparing, fermenting, shaping and baking.

So, to give me a little more balance while still making your bread with exactly the same love, care and time, I’m making a small change. 🌾

From now on, my delivery day will be WEDNESDAY. 🍞

This will include deliveries to The Leaf Lounge Café as well as my regular customer orders.

Because I need time to plan my baking diary and make sure I have all the lovely ingredients I need, orders for Wednesday delivery will need to be with me by the THURSDAY BEFORE.

🌿 New weekly routine:
Thursday – Order deadline
Wednesday – Fresh sourdough delivery day

Nothing about the bread is changing — it will still be the same proper, slow-fermented sourdough, handmade by me from start to finish. I’m simply moving my baking days so that I can continue doing what I love without every weekend disappearing into flour and dough! 😂❤️

Thank you so much for supporting my little bakery. Whether you order every week, occasionally treat yourself to a loaf, pick one up from the café, share my posts or recommend me to somebody else — I appreciate every single one of you.

The Garden Bakery wouldn’t be what it is without you, and I’m incredibly grateful. 🌿🍞❤️

☀️ A little note from The Garden Bakery… 🍞🌿

As you all know, we’ve been having some seriously hot weather, and while I’m doing everything I can to keep my sourdough behaving itself… sourdough starter has other ideas. 😂

One thing I’ve learnt with sourdough is I don’t tell it what to do — it tells me! It’s a living, natural process, and temperature plays a huge part in how quickly it ferments and how the finished loaf behaves.

So during this extreme heat, you may notice that some of your loaves look a little different from usual. Some may be slightly flatter or spread a little more, and this is particularly noticeable with my freshly milled wholegrain loaves, which naturally have a different structure anyway.

But please be assured…

❤️ You are not getting any less bread for your money.
🌾 The same amount of flour goes into every loaf.
🥖 The same ingredients and care go into every batch.
🌱 My freshly milled grains are still milled right here at The Garden Bakery.
⏰ Every loaf still goes through its long sourdough fermentation.
😋 And most importantly — they still taste absolutely gorgeous!

A flatter loaf doesn’t mean a lesser loaf. It still contains all that beautiful freshly milled grain, fibre, flavour and goodness — it just might not be winning any height competitions while the weather is this hot. 😂☀️

That’s also part of what makes real sourdough so special. It isn’t produced on a factory line with additives designed to make every loaf identical. It’s flour, water, salt, starter, time… and apparently at the moment, a LOT of sunshine. 😂

So if your loaf arrives looking a little more relaxed than usual, please don’t worry. Inside is still the same Garden Bakery sourdough you know and love. ❤️🍞

Thank you, as always, for supporting my little bakery and embracing the perfectly imperfect nature of real, handmade sourdough.

🌾 Sourdough Myth Busters

❌ “Sourdough is just bread with a sour taste.”

✅ Not at all! Good sourdough doesn’t have to taste sour. The flavour depends on fermentation, flour and how it’s made.

❌ “It’s just expensive bread.”

✅ Each loaf takes many hours—often over 24 hours—to ferment, shape and bake by hand.

❌ “Freshly milled flour is the same as shop flour.”

✅ Freshly milled flour contains more of the grain’s natural goodness because it’s used soon after milling rather than sitting in storage.

❌ “The holes mean it wasn’t baked properly.”

✅ Those beautiful holes are a sign of healthy fermentation and careful handling.

❌ “Sourdough lasts longer because of preservatives.”

✅ Traditional sourdough contains no preservatives. The natural fermentation helps it stay fresh naturally.

❌ “Brown bread is always wholegrain.”

✅ Not necessarily. Some brown loaves are coloured or contain only a small amount of wholegrain flour. Always check what’s actually in the loaf.

❌ “All sourdough is artisan.”

✅ Sadly not. Many supermarket ‘sourdough’ loaves are made with commercial yeast and additives to speed up production.

❤️ At The Garden Bakery, every loaf is made the traditional way—with time, patience and simple ingredients. From freshly milled grain to the final bake, every step is about creating bread that’s full of flavour and made with care.

Real ingredients. Real sourdough. Made with love. 🌾🍞

☀️ Behind the Scenes at The Garden Bakery in This Extreme Heat… ☀️

Everyone sees the beautiful finished loaves… but here’s what baking sourdough looks like in a heatwave! 😂

🥵 I’m a hot, sweaty mess before the day has even started.
🌋 My sourdough starter is trying to escape the jar every few hours.
⏰ Dough that normally behaves itself is suddenly proofing far too quickly.
🧽 The washing-up pile seems endless, with dried-on dough stuck to absolutely everything.
💦 Flour everywhere… sweat everywhere… and I’m pretty sure the kitchen is hotter than the oven!

But then…

👃 The smell of fresh sourdough fills the bakery.
🍞 Those beautifully blistered, golden loaves come out of the oven.
❤️ And suddenly, every bit of the chaos feels completely worth it.

There’s something incredibly satisfying about turning flour, water and salt into something that brings people together around the table.

Thank you to everyone who supports The Garden Bakery. Every order makes the flour-covered kitchen, aching feet, mountain of washing up and summer heat worthwhile. I genuinely wouldn’t change it for the world. ❤️

Now… if you’ll excuse me, I think my starter is trying to climb out of its jar again! 😂🌾🍞

💚 The Garden Bakery is more than just a bakery – it’s a community. 💚

Recently, someone messaged me asking if they could buy some of my sourdough starter so they could have a go at making their very first loaf.

Of course I said yes! 🥰

I popped some healthy starter into a little pot, sent it home with them, and even recorded a few very badly filmed videos to help them along. 😂

The best part? They made their very first sourdough loaf… and they absolutely smashed it! 🎉🍞

Yes, baking bread is my business, but I genuinely love helping people discover the joy of sourdough. There’s something so rewarding about nurturing a starter, learning a new skill, and pulling a beautiful loaf out of the oven that you made with your own hands.

If I can help someone gain the confidence to bake their own bread, I’m always happy to do that. Whether you want to buy bread from me, learn to bake your own, or simply ask questions, my inbox is always open.

The Garden Bakery has never just been about selling bread. It’s about sharing knowledge, encouraging each other, and building a little community of people who love real bread.

Thank you for being part of it. ❤️🍞

🥖 What the supermarkets don’t tell you about the bread you buy…

Most supermarket bread is made to one recipe that has to suit thousands of customers. Every loaf is expected to look, taste and behave exactly the same.

At The Garden Bakery, it’s completely different.

Every loaf is mixed, shaped and baked by hand, and because I bake in small batches, I can adapt many of my recipes to suit you.

🌾 Want freshly milled flour? I can do that.
🌾 Prefer a lighter loaf? I can adjust the flour blend.
🌾 Love spelt, rye, einkorn, kamut or hard white wheat? I bake with them all.
🌾 Looking for a softer crust for easier sandwiches or toast? I can often make that happen too.
🌾 Need vegan options or have a favourite flavour combination? Just ask!

You’re not choosing from a factory production line—you’re buying from a real person who loves experimenting with grains, flavours and traditional sourdough baking.

Every loaf starts with simple ingredients: flour, water, salt and sourdough starter, along with plenty of time and care. Nothing is rushed, because good bread simply can’t be.

One of my favourite parts of running The Garden Bakery is creating loaves that are personal to my customers. If you’ve ever thought, “I wish I could get a sourdough made just the way I like it,” there’s a good chance I can make it for you.

📍 Collections are available from:
• The Garden Bakery
• Leaf Lounge Café, Herne Bay
• Bun in the Oven Cakery, St Nicholas-at-Wade

🚗 If you happen to live on my route to Leaf Lounge on a Monday and you’re unable to get out, I’ll always do my very best to deliver your bread to you where I can.

Thank you for supporting a small local bakery. Every order helps me continue doing what I love—creating real sourdough that’s made for people, not production lines. ❤️
