A really heart warming day on Saturday teaching flatbread making for 'Rising Together' a workshop by exploring the intersection of art and bread-making. Grain (seed) and bread are themes within Issam's work - see 'Urgent Archive'  and 'You are not you and home is not home' before they close on Sunday May 26th. 
We made the flatbread dough using beautiful fresh wholemeal flour from Miller's Choice wheat grown and milled by . Participants designed and made stamps and decorated and baked their breads with their personal marks and messages and the workshop ended with the group breaking bread together and sharing thoughts and stories. Some of the results (that didn't get eaten) have been added by Issam to his exhibition.

Bread is one of our oldest foods. Amazing what you can produce with just flour, water and salt. Real bread doesn't have to be sourdough like these ones, but it's not if it has a huge long list of ingredients including additives and improvers. I guess if you are looking at these bread pics you might be a convert, but do spread the word in Real Bread Week. Check out if you want more info.

The dough was feeling the cold this week. As a baker, you are always tweaking something, the amount of leaven, amount of water, water temperature, proofing time (& temperature) and even the bake, in order to achieve the result you'd like.

The first time I came across chocolate sourdough bread was during a short stage at the wonderful in San Francisco in 2017. Their petite intensely dark loaves really did sell like hotcakes at their Fort Mason Farmer’s Market stall. I was intrigued. It took me a while to come back to the idea and to formulate a recipe I am happy with but oh my, chocolate sourdough is so much more delicious than I expected! Not sweet (don’t think chocolate cake), very dark and chocolatey with specks of chocolate pieces, a hint of roasted cocoa, bitter notes and fresh, fruity hints. You can eat it all by itself or with some butter or nut butter and jam. I also love it with cream cheese or a soft goat’s cheese.

A very happy day walking and talking around the wheat fields . John and Guy Turner grow the organic grain that will be used for the bread and products that (for one) will make over the next year. A face to face gathering of the folk along the supply chain. From farmers and growers, miller Paul , bakers and consumers. Amazing to have this direct engagement, make new connections and come away with much food for thought (as well as eating good food, coffee and beautiful breads to taste).
Thanks so much to John and Guy and everyone and Kim and others for organising it, your hospitality, generosity and continuing inspiration.
