Choc chip cookie cake 🍪

I don't know which part of this cake I like the most, the choc chip cookie filling or the fresh cookies on top. I think its safe to say that I like all of it the most 😋

What's my trick for getting uniform looking cupcakes?
-
An ice cream scoop! I use a medium sized metal ice cream scoop to get the perfect amount of batter into each case. If you don't have an ice cream scoop, just fill the case until 3/4 full. Leave a little room for the cake to rise and you're on your way to have the perfect domed cupcake each time. 😁

These were chocolate cupcakes which ended up having a raspberry jam filling and raspberry & chocolate buttercream topped with freeze dried raspberries. Photos to come! 📸

Chocolate. Biscoff. Cupcake.
This one's always a winner 🏆
I personally find biscoff overly sweet, so I paired it with dark Lindt chocolate to add a bit of bitterness and voilà! The perfect combo 👌

*Easy chocolate buttercream recipe*

300g icing sugar
100g butter (room temp)
40g unsweetened cocoa powder
3tbsp whole milk (cold)

1. Cream the butter, sugar and cocoa powder together.
2. Add the milk and whisk until smooth and fluffy.

I use an electric mixer to get the perfect texture! Enjoy 😉

Did I bake my own wedding cake? No!

This was the most commonly asked question before (and even during!) our wedding. The pressure of baking a wedding cake is a whole different story and I didn't want to open that door for myself. Respect to the bakers who did though 👏

Long story short, so much has changed in a year and that's why I've not been working on my small business. What hasn’t changed is my love of cakes, baking and all things sweet. This is my 'hi I'm back' post to let you know that cake will be served and I have lots of new ideas planned that I cannot wait to share with everyone 😊

And yes, this is the dessert table spread from our wedding. I had to share this photo because it was definitely a highlight and I also didn't know what cake photos to post 🤫

I promise it is completely coincidental that my cake matches the decor of the living room 😅
While you're here let's have a mini life update chat!
Yesterday marked the official completion of the first year of my masters. Hooray! That means I finally have free time to focus on new recipes, content and blog posts for my business. Second hooray! I have so much planned that I can't wait to share with you. Let summer commence. Third hooray!

*SNEAK PEAK*
New cake flavours that are coming to the menu (as requested by my loyal tea and cake fans) are lemon Earl Grey, pistachio & rose and the infamous chocolate hobnob.
Moving from trial phase to production has been super exciting. Thanks to all my taste testers for the constructive feedback. I will select a different group of people for taste testing next time so it's fair 🤣
