The Platinum Jubilee cupcake! This is my take on the Platinum Pudding. A custard flavored cupcake filled with lemon curd and shredless orange marmalade topped with vanilla buttercream, an amaretti biscuit, a mandarin orange segment and jeweled white chocolate bark. Available at Neston Market for £1.50 each.

I'm very sorry to say that I won't be at Neston Market tomorrow. Apparently the is a very nasty cold going around and it's my turn to feel horrible. I will be back next Friday!
