I am privileged to be a part of each and every wedding that I am asked to create a cake for. So designs resonate with my playful side, while others are more classical. Ami and Chris’s cake falls into the latter category.

They chose buttermilk vanilla sponge, boozy carrot cake and P**n Star martini - not to be shared with their guests. 😊

All the flowers on the cake are sugar. Some tested me more than others but in the world of cake, every day is a school day.

I was lucky enough to be invited to Ian and Martin’s wedding. They also tasked me with creating their centrepiece. As soon as I saw their invitation, I knew what their design would be.

They commissioned me to create a bespoke edible pice of art. In fact, many of their guests thought it was a part of the room decor!

The staff at The Lake House, Waterloo were absolutely amazing! The room was kept at the perfect temperature to ensure the cake remained at its best on one of the hottest days of the year.

No celebration is complete without a cake. A new job, an anniversary or birthday is always marked with a cake. A simple pie or plate of chips just doesn’t have the same celebratory ring to it. So next time you do have something special to celebrate, do it with an edible work of art that you and yours guests will remember for years to come.

This week’s wedding cake was for a couple who love games. We did have a chat about the design but they didn’t know what the design was until they saw it on their wedding day.

The inspiration was their wedding invitation.

Chocolate orange cake with orange curd buttercream, sticky toffee pudding cake with caramel sauce and Jamaican rum, ginger caramel cake with spiced caramel sauce.

Being asked to be a part of a couple’s wedding is a huge honour. When I’m working on a wedding design, I often find myself completely immersed in the process, losing track of time as I strive for perfection - which is never attainable.

When chatting with a florist and THEY say they can’t believe the flowers and foliage aren’t real, I know I’ve done a good job.

Today is all about rest and recuperation before I start again.

This weeks is all about flowers. I’ve still got a few more days to make what I need. I haven’t counted the number of petals I’ve cut, textured, coloured and curled but let’s just say it runs into the hundreds. I’ve made 8 blooms so far but need more.
