Over the years, my passion for food and baking desserts has evolved into creating not only something utterly delicious but healthy as well! Motherhood and reading about how important is organic food changed my perspective! Finding out how many chemicals are in the food that I considered healthy shocked me! I bake with the best ingredients I can source, and my packaging is fully biodegradable. Seas

✨ Flavour of the day: Tonka Bean & Valrhona Dark Chocolate ✨
Every now and then I discover an ingredient that completely surprises me… and this week it was tonka bean.
Often described as a blend of vanilla, almond, caramel and warm spices, tonka has an incredible depth of flavour that's difficult to put into words. Paired with rich Valrhona dark chocolate, it creates a macaron that is elegant, comforting and just a little unexpected.
As someone who loves exploring exceptional ingredients from around the world, this combination has quickly become one of my favourites. It isn't loud or overpowering—it simply leaves you wanting another bite.

Cremeschnitte… often called custard slice — but they’re not quite the same. 🍰

This is the version I grew up with.
Light. Delicate. No heavy icing — just a soft dusting of sugar.

Layers of crisp pastry…
And in the middle, real custard made slowly, with real vanilla bean.

It should hold its shape, but melt the moment you take a bite.

This one enjoyed a moment in the sunshine before heading to Neath today — and it was a real pleasure to bake.

Simple ingredients, done properly. That’s where the magic is.
