In all the excitement of the gem of a day that was yesterday, I took no foodie photos. So for your viewing pleasure I have cut a slice of my Blackberry and Almond Torte. Handpicked blackberries and naturally gluten free as it is packed with ground almonds. Served with a dollop of greek yogurt and my delicious Blackberry and Bayleaf Coulis. Perfect slice for a lazy day in the sunshine 😎

I have been thinking about making this for a while and today was the day! Almond Croissant Cake - layers of sliced buttery croissants and frangipane, topped with flaked almonds and then baked until golden. A generous dusting of icing sugar to crown it. Can't wait to try it once it has cooled.
I'm already thinking next time it might also get a layer of apricot jam or maybe cherry compote 😋
