I have been thinking about making this for a while and today was the day! Almond Croissant Cake - layers of sliced buttery croissants and frangipane, topped with flaked almonds and then baked until golden. A generous dusting of icing sugar to crown it. Can't wait to try it once it has cooled.
I'm already thinking next time it might also get a layer of apricot jam or maybe cherry compote 😋

I brought home from my holiday in Scotland some lovely Whisky Tea and Scottish Breakfast Tea (the OG breakfast tea loved by Queen Victoria that became English Breakfast). I also fell in love with the little mini shortbread served with pretty much every coffee or tea I had there. So I had to make some.
Keep your eyes peeled for my mini Whisky Tea Shortbread and of course some lovely Dandelion and Lemon shortbread to usher in Beltane and celebrate the turning of the wheel.
