🔥 300 CHOUX BUNS. 600 HAND DIPS. 160°C CARAMEL. ONE SHOWSTOPPING CROQUEMBOUCHE. 🔥

This isn’t simply a dessert… it’s a labour of love, precision and patience.

✨ 300 delicate choux buns, each filled with rich, silky vanilla pastry cream.

🔥 Each one individually hand-dipped — twice — into caramel heated to a blistering 160°C, before being carefully positioned to create this spectacular towering masterpiece.

And then comes the pièce de résistance…

👑 My signature hand-piped toffee crown, created entirely by hand to complete the tower.

A traditional croquembouche is a race against time. Caramel is incredibly delicate and, to achieve that irresistible glass-like crunch, this beauty must be assembled as close to the wedding as possible.

And the crunch? Paramount.

The bride had dreamed of having a traditional croquembouche at her wedding, so creating this for her was something truly special.

Behind the finished tower are hours of preparation, precision, burns, sticky fingers, concentration and an awful lot of caramel! 😂🔥

But when you see the finished creation standing proudly at the wedding — and, more importantly, see the bride’s reaction — every single moment is worth it.
