She has become very well known for her attention to detail (check out her sugar flowers!) and the thought process and overall finish of her cakes speaks of someone who simply will not give a client anything substandard. Setting Kasserina apart, is her passion for using great quality natural ingredients not synthetic substitutes. There's oodles of high end melted dark chocolate in the chocolate frosting here, and you can really tell. No artificial vanilla essence, no orange flavouring, no "strawberry-like” something or other... when Kass says her flavours are fresh and delicious, she really means it! What do you love most about your job? I love the process, and I can be really proud of what I've done, but I'm like a mother hen with my cakes and there's simply nothing better than seeing the look on people's faces when what they'd hoped for comes to life in front of them. I've always been really craft and cooking oriented and my Mum used to make wedding cakes when I was kid so it just seemed like a natural thing to do. Why should clients choose you? I do think my cakes are more special than most, but also I'm more flexible than most and happy to find the best fit for my clients, rather than the easiest fit for me!"

Hand-made sugar peonies and roses on this blush pink cake for K&A at The Italian Villa this weekend.

Top tier lemon drizzle, base tier a classic Victoria sponge.

The Medici Suite was looking gorgeous with clouds of luxurious florals by too. Hope your day was wonderful lovely couple, and lots of best wishes for your future life together ###x.

Part 3 of my making a 6ft, hand-painted cake. My favourite bits tbh.

I painted the tea party just as described in parts 1 & 2, using watered down gel colours and being patient with the way the sugar paste wants to melt 😉.

Using a side bar floating separator from Prop Options I created a little dell using some green fondant to build up a little hill (to give the toadstools something to stick into), green royal icing as glue and edible moss.

The moss is a simple cake recipe with a little extra raising agent, that you colour and cook in the microwave. I’ve been using the same recipe for years but I honestly can’t recall where I got it from. I’m not going to share someone else’s recipe without permission, but if you search on line for “edible moss recipe” you’ll find lots of free ones.

My toadstools and mushrooms I’ve made on cocktail sticks so they stand up better.

Here’s another example of a cake that I’ve photographed as two different sizes to demonstrate how you can choose a size that works for you.

I love the details of this design, from the base colour, to the texture, to the gold lustre picking out the details, to the peachy colours of the sugar flowers.

The fondant was Saracino’s and I used their flower paste too.

The floral texture was created with one of ’s amazing impression mats. Check out her range, they’re brilliant!

I have a habit of going big when I can, but a style that appeals to you can easily be made to fit your preference on size. Don’t be intimidated, let me know what you like and I’ll find the perfect fit. An intimate wedding can still have a statement cake (we just add dummy tiers). A wedding with a couple of hundred people can still have a small but intricate display cake (we can always top up the servings with extra cakes for the kitchen). Let know which is your preferred size. One size does NOT fit all, lol. The Wedding Index

There is always a risk when you handle these tiny filler flowers, and you will always lose a few petals when dusting. It doesn’t affect the overall effect at all and no-one else will ever notice but, when you’ve carefully thinned and rounded each petal by hand, it’s hard not to feel a little pang when they are lost in the process 😉😆
