🥧 Pie Up: Our Traditional Standard
This is how we serve it by choice – the method we’ve stood by since F. Cooke first opened its doors across the East End. The pie is placed crust-side up, resting proudly on top of our smooth, creamy mash.
• Keeps pastry crisp – your golden crust stays just as it should, until you’re ready to cut in
• Full flavour control – you decide exactly when the rich parsley liquor, black / white pepper and vinegar meet the pastry
• Pride on a plate – you see our handmade artisan pie exactly as it came from the oven, every single time

🥧 Pie Down: The Classic Alternative
Crust-side down – the way many remember from the earliest Victorian counters – is still available whenever you’d prefer it.
This is sometimes referred to “The South London” way
Originally born from the busy standing counters of Hoxton, Bow and Broadway Market – perfect for dockers, costermongers and market traders needing a hot, quick meal eaten standing up.
• Protects the crust – the mash underneath stops the base from softening too quickly
• Traps heat – acts like natural insulation to keep every mouthful piping hot
• Easy one‑handed eat – cut straight down through pastry, meat and mash in one go
