Life at Baked by Daria lately ✨

It’s been a few weeks since we officially launched Baked by Daria at Castle Road, and honestly, the last few weeks have been a bit of a whirlwind.

The bakery has been busy, the ovens have been working overtime, the shelves have been flying out and I’m slowly getting into the rhythm of this new life.

It’s been amazing seeing so many familiar faces, meeting new customers and watching people come through the doors every day, picking up their daily sourdough, stopping for coffee, trying our sweet treats. We’re so grateful for all the support we’ve had since the launch!

So, if you’re new to Baked by Daria, here’s a little bit about what we do…

We’re a small artisan bakery where our breads, focaccias and sweet bakes are made and baked right here in our bakery every day, using good, locally sourced ingredients wherever possible, with plenty of love, care and attention going into everything we make. 🤎

Our shelves are filled with artisan sourdough breads, focaccias and a selection of sweet treats including brownies, brown butter cookies, cinnamon rolls, brioche buns, apple crumble and seasonal bakes that change throughout the year.

We also make fresh sandwiches daily, using our own breads and focaccias, and serve delicious barista coffee from Caffeine Limited — whether you’re staying for a coffee and something sweet or grabbing something to take away.

✨ THIS SATURDAY ✨

Baked by Daria is officially launching at Castle Road.

Baked by Daria has been my brand from the very beginning — from those first bakes in my home kitchen, through markets and countless orders, to where we are today.

But now it’s time for the bakery itself to truly feel like Baked by Daria.

Over the past few weeks, we’ve been making changes behind the scenes while keeping the bakery open and baking for you every day.

This Saturday, we’re officially introducing the new look, the new logo and the next chapter of the bakery.

But for me, this isn’t just about how the bakery looks.

It’s about what I want this place to be.

A local bakery focused on good quality, handmade products, working with local suppliers and ingredients wherever possible. A place where everything is made with care, where you can come in for your daily bread, a good coffee and something sweet.

I’m also really excited to bring more of my Polish heritage into what we make. Polish flavours, traditions and recipes will become part of the bakery and, over time, you’ll see more of them on our shelves.

And finally… coffee!

Our new professional barista machine is arriving on Friday, and I can’t wait for you to experience the coffee we’ll be serving.

So this Saturday, we’d love for you to celebrate the new Baked by Daria with us. 🤎

IMPORTANT UPDATE

Unfortunately, due to bakery works not being completed within the expected timeframe, we will need to close the bakery today, Monday 14th September.

We apologise for the short notice and any inconvenience this may cause.

Some exciting changes are happening inside the bakery this week, and we can’t wait to show you what we’ve been working on! ✨

We’ll be back open as usual on Tuesday from 7:30am, with a fresh new look inside the bakery.

Week 3 at Baked by Daria ✨

Three weeks in, and things are really starting to take shape

It’s been a busy few weeks behind the scenes, and from next week you’ll start to see even more changes happening around the bakery as we continue to make it feel more and more like Baked by Daria.

One thing that won’t change is the way we make our products — the artisan way. From our sourdough breads, to focaccias and our sweet bakes, everything is made with care, time and attention to detail. 🧡

I’m so grateful for all the support, kind words, visits and purchases over these first three weeks. It honestly means so much. 🫶

And a little reminder — we’re OPEN this Bank Holiday Monday, 9am–3pm!

A little more about our sourdough 🍞

Our sourdough is at the heart of what we do at
Baked by Daria

Our loaves are made with just 3 simple ingredients — flour, water and salt. That’s it.

Every loaf starts with our own sourdough starter, carefully prepared dough and plenty of time. We follow an artisan approach, allowing the dough the time it needs to naturally develop its flavour, texture and character.

There are no shortcuts when it comes to our bread. From mixing and folding to shaping, proving and baking, every loaf is made by hand.

We love a loaf with a beautifully crisp crust, a soft, open crumb and plenty of flavour — the kind of bread that’s just as good with butter as it is turned into your favourite sandwich.

Our loaves are available Monday–Friday from 7:30am and Saturday from 9am.

And over the next few posts, we’ll be sharing a little more about the ingredients that go into our bread and why we choose them.

First Week ✨

What a first week it’s been! 🧡

A whole week of Baked by Daria at The Bakery on Castle Road and I honestly couldn’t have asked for a better start.

From early mornings mixing and shaping sourdough, watching the ovens fill up with beautiful loaves, focaccia and all the sweet treats to meeting so many lovely new faces and seeing regular customers come back through the door it’s been incredibly special.

We’ve baked, we’ve sold out, we’ve had a few little learning curves along the way, and most importantly, we’ve had so much support from our amazing local community.

Thank you to everyone who has popped in, bought something, said hello, shared our posts, recommended us to friends or simply wished me luck. It genuinely means more than you know.

And just a little reminder for next week:

Sourdough breads will be available again on Monday, and then Wednesday–Saturday.

Tuesday you’ll be able to pick up some of the classic yeasted loaves still available instead.

And because you’ve been so amazing and we’ve sold out of sourdough earlier than expected, we’ll be increasing the quantities for next week too!
