Earl Grey Tea & Spiced Rum Tea Brack

I have been wondering what the difference is between a barmbrack and teabrack ?

So having done a bit of research I have discovered the following:-

Barmbrack
Traditionally made with a yeast-raised dough (using “barm,” the foam from fermenting ale).
Usually shaped into a flat, round loaf.

Tea Brack
Made with baking powder instead of yeast. Baked in a standard rectangular loaf tin.

I have soaked dried fruits overnight in Earl Grey Tea & Spiced Rum giving a moist, cake like, speckled crumb. Great with a slab of salty butter !

Chocolate Nemesis an iconic, ultra-rich flourless chocolate cake.

My first taste experience was at London’s Legendary The River Cafe back in the 80’s where this dessert was created.

It is dense, velvety, and fudge-like similar to a rich mousse.
