Eve’s pudding, so good it could get you kicked out of Eden…
I am learning to use the four door Aga I inherited when we moved house. It is very much trial and error while I learn!
We also have a beautiful apple tree with literally tens of dozens of delicious apples… hence the many, many apple recipes I’ve been trying.
This one is a firm favourite with my family, and they have been requesting it for weeks.
Soft, pillowy sponge cake with delicious cinnamon apples.
Cooking times and temperatures will vary for conventional and fan ovens…
I got the baking dish for £7.50 in the TK Max at Silverburn and it is great.
It’s a 25x15x8 cm dish… a good size for this pudding, but any similar baking dish would do.
It took roughly 8 apples but they are small, home grown apples.
I used roughly 1/2 tsp of cinnamon and 1 heaped tbs of sugar for the apples plus a good sq**rt of lemon from the bottle.
Chop apples into oven dish containing the lemon juice and toss well… mix in cinnamon and sugar to taste, and pop in the oven to cook through for 20mins at 200C until cooked through and soft but still holding their shape and not mushy.
For the sponge cake:
Cream 150g of butter and 150g of sugar together until light and fluffy… add any almond or vanilla extract if desired. Then mix in 150g of self raising flour and three room temperature eggs. Mix to thoroughly combine but don’t over mix.
Spoon cake batter over the cooked apples and turn oven down to 150C, cook for 25-35 mins or until golden brown and a skewer comes out clean.
Enjoy hot with custard or ice cream!
I obviously didn’t turn the Aga down… I moved it from the roasting oven to the baking oven. So times will vary!
