A big thank you to everyone who came to Newton Farm Shop & Cafe Farm day on Monday and bought my cakes! I sold out before the end of the day, which was amazing! As always, the day was so much fun, its my favourite event of the year (along with their Christmas festive evening!!), and it just gets better and better each year.

Roll on next summer!

After lots of tweaking I think I've finally nailed my gluten free stuffed cookie recipe. It was quite a challenge to create a gluten free cookie which is suitable for stuffing, aswell as tasting delicious and getting the baking just right so its baked enough but still has a soft baked middle. This particular cookie is stuffed with marshmallow whip, salted caramel and chocolate. Yum!
